Penne Pasta with Spinach and Bacon

Reviewed: Jul. 22, 2015
Generally I like to first make a recipe as written for a fair rating. But this time after reading all the reviews and suggestions I decided to make changes as I had most of the additions on hand. I added mushrooms, basil, a dash of cayenne pepper and small onion. I held out some of the basil and bacon and topped the dish along with some parm. cheese. With all these changes it was beyond 5 stars!!!! So I figured w/o all these changes it would still be 5 stars. Thanks Jean Tagliere for a great recipe that my husband and I enjoyed so much.

Fluffy Pancakes

Reviewed: Jul. 22, 2015
This recipe really does make light, fluffy and tasty pancakes. I had buttermilk on hand so used that instead of the "sour" method. Ended up using over a cup of buttermilk to make the batter thin enough to pour. Also let the batter set a little. All in all a great recipe. Thanks Kris!

Artichoke Chicken

Reviewed: Jun. 10, 2015
This is good especially if you take some reviewers suggestions about layering spinach in bottom of dish, adding caramelized onions, red pepper flakes and bacon to the artichoke mixture. But....it still didn't measure up to an old artichoke chicken I've been using for years that everybody loves and is often requested. Still, this is good and would have no problem making it again just for a change.

Slow Cooker Carnitas

Reviewed: Feb. 26, 2015
This is delicious! I had never heard of carnitas before so it was fun to try something different and it did not disappoint. I only had a 2# pork roast but I kept the spices the amount of the spices the same. Cooked on low for around 6 hours and then browned in the oven for 15 min. and it was perfect! Thanks Erin Parker for submitting such a easy and great tasting recipe.

Roasted Cauliflower 'Steaks'

Reviewed: Dec. 6, 2014
Oh My! Where have you been hiding all these years!!! For being so simple and easy it is really, really good. I went for the garlic powder option and at the last minute decided to sprinkle on some Mrs. Dash Original seasoning. I think this added a lot to the flavor. Thank you SPetrocelly for sharing this recipe. It's my new best way to fix cauliflower. Next time I will add the Parmesan cheese as suggested by Marilyn.

Downeast Maine Pumpkin Bread

Reviewed: Dec. 6, 2014
I did not deviate from the original recipe even though I was tempted!!! Mine turned out tasty, but just a little dry. Wasn't as moist as I had hoped for. So next time...and there will be a next time...I am going to take some of the other reviewers advice and see what happens. I really like this recipe and have high hopes it will meet my expectations the next time around. Thanks Laurie Bennett for this recipe and hopefully I will get it right!!! I will change my rating if it does.

Wine-Braised Beef Brisket

Reviewed: Oct. 31, 2014
Can't say I loved it, but can't say I didn't love it either. Maybe it was the wine I used or the use of the tomato sauce...just couldn't figure out what it was about the flavor that seemed a little "off" to me. Anyway, thanks RickyBobby for submitting this. From all the rave reviews I'm sure it's me and not the recipe.

Amusement Park Cornbread

Reviewed: Oct. 31, 2014
Really tasty! Reason I only gave this 4 Stars is because mine turned out crumbly and I prefer a moist cornbread. Want to try again and if it turns out better next time, I will change my rating. I did cut down on the sugar, but it shouldn't have made a difference in texture. Maybe it needs another egg or more milk? You can't beat the flavor though so this is definitely a "try again" one for me...just in case it's me and not the recipe. Thanks Trish!

Slow-Cooker Beef and Vegetable Soup

Reviewed: Oct. 31, 2014
I almost didn't try this recipe because of the 3 Star rating, but so-o-o-o glad I talked myself into it anyway. I didn't have the fresh thyme or tomato paste on hand so I substituted with dried thyme and a small can of tomato sauce. I added a little red wine (just for good measure!)and some parsnips I wanted to use up. All I can say is....."YUM"!!!

Sassy Tailgate Sandwiches

Reviewed: Oct. 29, 2014
In spite of me these turned out 5 stars for a recent 'Girls Day Out' gathering at the beach house. The night before I was tired, in a hurry and just skimmed over the recipe. I mistakenly mixed the chive and onion cream cheese in with the sauce ingredients! I went ahead and spread some of the mixture onto the roll tops. Made the sauce (this time!) according to recipe, etc. Baked 15 min. covered/5 min. uncovered. These were a real hit!!! We had fun coming up with different ways to fix these in the future: using small crescent rolls, different types of meats, cheeses, sun dried tomatoes, etc. etc. Nothing like pooling together our culinary resources!!! Thanks AR for submitting this recipe.

Skillet-Braised Brussels Sprouts

Reviewed: Oct. 11, 2014
This was good and glad I tried it. Followed the recipe except for Step 2. I just browned the Brussels sprouts and garlic in the oven instead of sauteing them on top of the stove. Thanks Kyle!

Camarones al Ajillo (Garlic Shrimp)

Reviewed: Oct. 11, 2014
I have to say that I didn't have high hopes for this recipe but was intrigued by all the ingredients and how the flavors would meld together. I'm happy to report that it was DELICIOUS! Followed the recipe exactly except I used red bell pepper instead of the green (don't like!). Served it on top of those mini bowties pasta and it was perfection. Thank you, LatinaCook for such a great recipe. Those that try it is in for a treat!

Chef John's Caramel Apple Pie

Reviewed: Oct. 11, 2014
This is really sweet!....as I figured it would be with a cup of sugar, but wanted to make it to recipe. Not that it is a bad thing as it tasted good, but just too rich for our taste. It was an easy pie to throw together and help celebrate the coming in of fall! Thanks Chef John!

Restaurant-Style Zuppa Toscana

Reviewed: Oct. 9, 2014
A definite 5 Stars for this recipe!! Made to recipe except for using 2 C. Water and 2 C. f/f 1/2 & 1/2. All I had on hand was the bulk mild Italian Sausage so I used that too. Anyhow, it all came together into one delicious tasting soup. Thanks Nancy! I'll be using your recipe often with the winter months coming up!

Pears Baked in Amaretto Cream

Reviewed: Oct. 9, 2014
This was so incredibly delicious! I used F/F !/2 and 1/2 but otherwise followed the recipe. It made a lot of luscious sauce. So next time I would either add one or two more pears or for two pears just cut the ingredients in half....except the amaretto, of course! Thanks Sherry Lynn. We loved your recipe!

Slow Cooked Chipotle Chicken

Reviewed: Jul. 23, 2014
Thankfully some reviewers cleared that up about just 2 peppers out of a can of chipotle chili sauce that's listed in recipe. I would have been one of those cooks that would have added 2 cans!!! Whew! Anyway, this is what I ended up doing: I had some leftover rott. chicken so I shredded it and coated it with some Mrs. Dash Chipotle Seasoning, added the "1" pepper with some sauce, mixed it all up good and put in the crockpot. Laid the sliced onions and diced garlic on top. Instead of the water and chicken bouillon powder I heated up some rich chicken broth I had on hand (I forgot to follow directions about adding the pepper, onion and garlic and then blending...will do this next time!)and poured over chicken mixture. Cooked on low around 3 hours. Served this with corn chips, sour cream and salsa. Believe me, this was delicious. Of course I plan to make according to recipe next time but honestly I don't see how it could taste any better.

Baked Ziti I

Reviewed: Jul. 12, 2014
I am just now putting this into my recipe box and writing a review though I have been making this since 2009. Don't know how it got overlooked because it is one of my very favorite recipes on this site. I have used different cheeses, spaghetti sauces and layering. It always turns out delicious and a big hit whenever I serve it. I have noticed that the flavor changes a little with each type of spaghetti sauce and have now found one (Rao) that is just right! Sometimes I have even added a can of mild Rotel and some red pepper flakes for added zing. I sometimes even mix the pasta with the sauce before layering and it still turns out great. Thanks so much Colleen B. Smith for this outstanding recipe.
