Albino Pasta

I liked this a lot. First time I made as directed and second time I used angel hair past and squeezed a lemon over and added 1/4 tsp dried chiles. Even better the next day for lunch.

Amelia's Tuna Macaroni Salad

I've made it a couple of times. I'm not fond of onions so I left them out the second time. The sweetness of the peas is great with the crunch of the celery and bacon. I added another teaspoon of salad dressing mix the second time. TIP: I tossed the half frozen peas in because I was late for a potluck. It kept the mixture cold until I got there. A friend suggested I add roasted peanuts next time.

Baked BBQ Fried Chicken

I really liked this recipe. I've cooked it with the bbq sauce and without. It is really important not to crowd the strips while frying or the chicken gets soggy. I liked the mesquite flavoring but I liked cajun seasoning better. I made these and packed for a picnic. Also brought along some bleu cheese dressing for dipping.

Mexican Cream Cheese Rollups

Used 1 pkg cream cheese and 2 container garlic flavored cream cheese. Tasted great. Added very finely chopped roma tomatoes. Great snack!

Garden Veggie Pizza Squares

Great ranch taste. Just for fun I cut the dough into cubes and put into greased mini muffin cups. Baked and cooled then filled with a dollop of the topping. Also skipped the onions and red peppers and substituted chopped roma tomatoes.

Confetti Bites

Very pretty appetizer. I serve this in larger squares as a summer meal. Very refreshing. I sometimes drizzle a little Italian dressing over it to soak into the bread base.

Mississippi Six

Great recipe! I used shaved roast beef since my husband objects to chipped beef - some hangup from his Navy days. I put the green onions on the side for people to spoon over their own servings. I'd like to try making this with small dinner rolls for an individual serving. Thanks for posting Kelli.

Cranberry Sauce for Acorn Squash

Easy Southwestern Salad Dressing

I used to have lunch at California Pizza Kitchen and have missed the flavor of their BBQ Chicken Salad. This is it! Wonderful dressing - sweet from the BBQ sauce but tangy from the ranch dressing. It's also good as a dressing for chicken breast sandwiches. Thanks.
