Deep South Fried Chicken

Excellent! I agree with the May 18 posting to brine the chicken in salted water for about 2 hours before cooking, This will keep the chicken juicy when fully cooked.

Easy Microwave Maple Fudge

This is a fast & easy way to whip up a sweet treat for a houseful of boys! This recipe has ALWAYS come out well every time I've made it (I use real butter and Mapeline). It's easy to keep the ingredients on hand "in the event of an emergency". :-)

Gaye's Microwave Fudge

Are you KIDDING me?!?! I've been slaving over boiling pots of sugar, butter and cocoa for 32 years - struggling to get that temperature perfect - just right to form a soft ball. Despite my efforts, having a sucessful batch was still a gamble. NOW you tell me that I could have just microwaved some butter and milk and stirred it into confectioners sugar?!?! ARRRGH! Well, as others have suggested, I sifted the sugar and cocoa. I also microwaved ONLY the butter and milk. After stirring it all together, I pour the mixture in a glass baking dish coated with real butter. (When your tounge touches the fudge, you get a nice buttery surprise for a moment. Woohoo!) I've made this several times. I've made it without nuts, with nuts, and I've made maple-walnut fudge. With all of the flavorings and food colorings available nowadays, you can get REALLY creative with this basic recipe! You could do ALL SORTS of variations for the holidays!! Have fun!

Broccoli Pie

This is a GREAT weekday meal! I add sea salt & fresh ground pepper. I used dehydrated minced onion & lowfat baking mix. It came out great! It was super easy and all 3 of my sons ate it up!

I followed the recipe exactly - and it was WONDERFUL! The 3 or 4 star ratings are written by people who altered the original recipe. Make this one as it is written, and you won't be dissappointed! My entire family came back for 2nd's and 3rd's - even my fussy 8 year old. I will make this recipe for guests in the future. ONE NOTE - I used "in shell" snow crab legs. One one hand, cooking the crab with the shell on adds more flavor to the broth. BUT, it was really messy to eat because the broth is all over the shell when you're trying to crack it. I think next time I may use lump crab meat... maybe.

Guinness® Corned Beef

My family loved it! I had to use 5 bottles of Guinness to cover the roast, though. That was a LOT of beer! I'm not sure if I liked this flavor better than my traditional recipe, but my family did. They want me to cook it like this all of the time!

World's Best Lasagna

Not the "World's Best", but good. I made this recipe EXACTLY as it was written, but it still couldn't match the lasagne made by my coworkers Italian wife. Sadly, she won't share her recipe. (Darn Italians!!! Haha!)
