Mother's Banana Bread

I made this banana bread according to the recipe (except I substituted chocolate chips for walnuts). YUM! It came out moist and delicious! I now want to buy over-ripened bananas just so I can make this again!

Honey Oat Beer Bread

really fun and easy to make...nice yeasty taste and chewy texture. I made beer rolls/muffins since I didn't have a loaf pan, but it came out great! tastes good with roasted apples.

Gingerbread Boy Cookies

dough was a bit crumbly and tough to work with when I got it out of the refrigerator. Also, I needed to wait until the molasses mixture cooled more before adding the eggs. The cookies, however, were delicious and were eaten quickly by my chocaholic family--nice to know non-chocolate desserts go too!

Light Wheat Bread

overall, not a bad bread. I let the yeast proof before adding the other ingredients, cut the salt back a little, and also threw in some sunflower seeds. Nevertheless, the bread was kind of bland. Next time I'm going to try adding olive oil instead of canola, and maybe honey instead of sugar. tasteless.

Homemade Black Bean Veggie Burgers

YUM! I had leftover black beans so I made these last night--they're so easy to make and tasted great on a bun with lettuce, cheese, and mayo. I didn't have chili sauce so I threw in barbecue sauce instead. The burger mush was a bit loose at first so I just kept adding breadcrumbs. The rest are in the freezer and I hope to make more soon! 3/13/11 Made these again. drained the beans really well and dried them before mashing. Cut up 3 slices onion, 4 slices red pepper (frozen) and two large baby bella mushrooms into very small pieces, then dried with a paper towel. mashed up beans in hand food processor with chili powder, garlic powder, cumin, and taco seasoning. Added 2 ketchup packets. Mixed in egg, then veggies, then 2.5 capfulls of breadcrumbs (~ 1/2 cup). Made 6 patties.

Whiskey Cake I

It did taste like butterscotch! It also smelled and tasted amazing. My only problem-the texture was a bit weird in places--I'm not sure if this is because of the syrup or because I used a cake from a mix.

Banana Bread

Moist and delicious! I added Hershey's chocolate chunks and around 1/4 cup of soymilk. I used 3 very very mushy bananas. Only main difference from the directions--It took around an hour in the oven instead of 45 minutes.

Cowboy Oatmeal Cookies

Delicious! I cut the sugar to 3/4 cup and used 1/2 cup applesauce in place of the margarine. Instead of butterscotch chips I used good old fashioned raisins and a dash of cinnamon. I was craving hearty oatmeal raisin cookies and this hit the spot!

Pizza Dough I

This is my go-to pizza dough recipe. Over the years I've altered it slightly--I use olive oil instead of vegetable oil, sometimes use a half-whole-wheat flour mix, and add garlic powder, basil, or rosemary to the dough for extra flavor. This recipe is a great basic dough recipe that is easy to customize to fit your tastes.

Amish Bread

I used this recipe to make challah bread for my vegan roommate. I adapted it a little so it would be more similar to the challah I usually make--I substituted honey for sugar and used a combination of whole wheat and white flour. This bread was delicious and moist. Thank you for giving me a vegan alternative to my normal bread recipe!

Cranberry Swirl Coffee Cake

I made a few minor changes and it was delicious! I used 3/4 cup sugar, vanilla extract (I didn't have almond), and I made it in an 8x8 square pan. I think I added a little bit extra cranberry sauce and I'm glad I did! It might have been easier for me to make in a tube pan but it was delicious nonetheless.

Iced Pumpkin Cookies

Excellent cookies! My fiance loved them! My only issues were that I wished the pumpkin taste was stringer (I'll probably add more pumpkin next time), and that the cookies hardened/became stale very quickly. When I baked them on Friday they were moist and cakelike, but by Saturday night they were kind of dry.

Simple Scones

I wish I could give this more stars because it was amazing! I did make some notable changes (to make it healthier and based on what I had in the house)--I used oil instead of butter, plain yogurt instead of sour cream, and dried apricots instead of raisins. I also threw in a dash of lemon extract. My only problem was they took around twice as long to bake. This will be a great breakfast tomorrow morning!

Gingerbread Scones

Delicious! I used a whole egg for the scone, instead of using the white for the wash, and substituted canola oil for butter. I also threw in some grated candied ginger and chopped dried apples. This was moist and delicious.
