Polenta and Wild Rice Burgers

this combo was really really REALLY bland. the tiny bit of seasoning gets lost among the starch......i would highly reccomend upping the fresh herbs to a tbsp or more and adding some chopped onion and more garlic .....instead of water i would boil the rice and polenta in some kind of broth or boulloin....

Black Friday Pie

I have been making this for the past two years and look forward to eating it as much as thanksgiving dinner. My modification: I reverse the stuffing and mashed potatoes to make it like a shephards pie....the stuffing makes a more solid crust..and try mixing some leftover cheeseball into the mashed potatoes...delish!

Lemon Poppy Seed Amish Friendship Bread

i completely omitted the oil completely...and substituted 3 tbsp of lemon flavoring for the muffin mix...and added 2 tsp of fresh lavender.....the recipe made 12 good-sized muffins...the recipe is very moist and flavorful

Sauteed Curried Corn

this is a flavorful sidedish that can accompany idian, chinese, or mexican food. i make this as a side dish with 5-spice fish.....my variation includes sautee onion in 2 tbsp butter....after onions are translucent add garlic and curry poweder and heat until aromatic....deglaze pan with 3 tbs white wine and add 1/4 tsp thyme..then add frozen corn

Veronica's Hot Spinach, Artichoke and Chile Dip

This is a fantastic appetizer and similar to a recipe passed on to me. The variation between this recipe and the one I have is the addition of 1/2 tsp of garlic, 1 small onion finely chopped, and 1/2 c sharp cheddar is added. For an extra kick, 1/8 tsp Cayenne is used instead of doubling the jalepenos.

Oatmeal Pancakes II

These are just as easy as the instant pancakes in a box. Great texture and flavor! I substituted 2 tbsp of vegetable oil for apple butter and ommited the sugar. Added almond extract instead of vanilla and added ~1/8 c chopped almonds to the batter!

Pepperoni Rolls

I haven't tried this specific recipe, but the pepperoni roll is definately a local tradition that gets 5 stars in my book (check out the wikipedia page for background info). For those of you not familiar with this cuisine, a common way to serve this is similar to a calzone. The pepperoni roll is typically bigger in size approx 6 inchs in length and 2-3 diameter. Once baked, these rolls can be stored in the refrigerator, frozen or kept on the counter top. When ready to serve, cut open and stuffed with sweet or spicy peppers in sauce (Oliverio's or Dellano's peppers are used locally) and mozerella cheese and then baked in the oven until the cheese is melted (approx 250 for 15 min))

Gorgonzola Pear Pasta

this recipe gave me inspiration for a modified version with stuffed shells ...i finely diced the pear and sauteed them in a tablespoon of butter and 1/4 c white wine..but left the pears with a crunchy consistency... i toasted a cup of walnuts and blended that with a 5 oz package of gorgonzola cheese crumbles in my food processor until smooth.....to each jumbo shell i added approx 1 tbsp of pear mixture and approx 1 tsp of the gorgonzola cheese mixture...baked them in the oven at 250 deg F for ~ 20 min. I made a fresh fennel white wine parm cream sauce and added 1 tsp of torn fresh sage....served 5 shells over wilted spinach and lightly covered in white sauce....

Hamburger Buns

my changes: 1/4 c flat beer instead of warm water....added 1 egg to the recipe.....and soften butter......not melted margarine...i had to tweak the dough consistency by adding little bit of flour and some oil ....let my bread maker do the kneading and allowed 1 rise...before reshaping the dough and baking.....these buns were very soft..any tips on how to make these buns harder?

Bagel Bread

As many others have reviewed, this is a tasty white bread and lacks bagel quality. The expectation of the bagel bread is the only reason why I gave this a 4 star rating, but for texture and flavor of a white bread it is 5 star, no contest. I have a Cuisinart Bread machine put it on a 1.5 lb white bread setting with medium crust. I added 2 tsp of yeast instead of 1.5, but followed the recipe as instructed. It came out fabulously and will definately be remade.

Steakhouse Wheat Bread for the Bread Machine

i didn't have instant coffee so i used 3/4 cups of coffee from my coffee pot...against my better judgement b/c i didnt' have instant coffee...i think may have been a bit too harsh for the yeast b/c my bread, while flavorful, was extremely dense....

great recipe...but i wanted to try a different spice combo so i substituted 1/4 tsp cardamom and 1/4 tsp of ginger and just put in a pinch of cinnamon...and they had great flavor

Delicious Rosemary Bread

I consider myself an intermediate cook, but ameatur baker....and this bread turned out FANTASTIC!.....i followed the kneading instructions as stated...but not having keaded bread before...i first watched a video on you tube, finally...i turned my electric oven on to 150 to let it heat up while i was making the bread and then turned it off while kneading...so the bread would have a warm place to rise....i had to intermittently turn it on for about 30-45 seconds during the second rise...

Lentil Loaf

read many reviews....grated up 1 carrot.. did not add broth to loaf mix..used ketchup...added sauted veggies...topped with bbq sauce.... VERY flavorful vegetarian dish

Downeast Maine Pumpkin Bread

i substituted the pumpkin puree for apple pie filling and only added 1/2 c sugar. And substituted 1/2 c apple butter for 1/2 c oil....and added 1/4 tsp of all spice.....the bread is flavor ful and moist ...next time i will make sure that I have pumpkin in my cabinets

This recipe was good reccomend adding a dash of cayenne to kick up the heat. The ginger flavor was weak....next time I will substitue 1/2 tsp ginger for a tablespoon of ginger paste...Good base spice combo

Baby Carrots with Dill Butter
