Can't Tell They're Low-fat Brownies

Reviewed: May 27, 2014
These were OK for a low-fat, low-sugar recipe (I tried it for a diabetic friend), but it didn't fool anyone else.

Strawberry Bread

Reviewed: May 27, 2014
My husband couldn't stop raving about this bread! I made it exactly like the recipe only cut the sugar down to 1.5 cups and even that was pretty sweet. I could have easily cut it in half and not missed it.

Sassy Chicken Enchilada Dip

Reviewed: Aug. 12, 2013
I used canned chicken and added shredded cheddar and jalepenos, but the dip was a big hit! I was looking for something heartier than just cheese and didn't have to be heated. This fit the bill perfectly. It was great with Frito Scoops or Chicken in a Bisket crackers.

Outrageous Warm Chicken Nacho Dip

Easy to make. Tasted great as written but can be used as a basis for many variations.

Buffalo Chicken Dip

Reviewed: Jan. 24, 2013
So easy to make and tasted great! You have to keep the dip warm after making it or else the cheese will firm up.

Hot Dog Noodle Casserole

Reviewed: Dec. 13, 2012
It seemed like an odd combo as I was making it, but it actually tastes pretty good, like a stroganoff with hot dogs. I had a lot of venison hot dogs to use up from my husband's hunting trip last year, which is why I was willing to try this unusual recipe. It's something different to try with hot dogs.

Chickpea Salad with Red Onion and Tomato

Reviewed: Dec. 7, 2012
It was a good summer salad, but I think I added too much garlic. It was a bit over-powering.

Couscous and Cucumber Salad

Reviewed: Dec. 7, 2012
This was a good recipe to take onto my boat in the summer since it doesn't have mayo and we only have a small frig (no cooktop) for food. I added some grilled chicken breasts to make it a main dish.

Corn Dog Casserole

Reviewed: Dec. 7, 2012
I had a lot of venison hot dogs to use up from my husband's hunting trip last year, so I've been looking for new ways to cook them. This recipe made A LOT - a whole 9x13 pan for me. The cornbread was good, but the hot dogs got a little dry when reheating. Towards the end of the pan, I started serving a slice of casserole on top of a bowl of chili. It was a good recipe to use up my hot dogs, but I probably wouldn't make again otherwise.

Hot Dog Creole

Reviewed: Dec. 7, 2012
I had a lot of venison hot dogs to use up from my husband's hunting trip last year, so I've been looking for new ways to cook them. This was a pretty good recipe, especially since the venison hot dogs have more of a kielbasa texture to them. I did as others suggested and served it over a bed of rice.

Vegetarian Chickpea Sandwich Filling

Reviewed: May 24, 2012
Good alternative to a traditional tuna filling, but it doesn't hold together as well, so it's best to use a pita or pocket bread.

Creamy Chicken and Wild Rice Soup

Reviewed: Jan. 24, 2012
Great soup for cold winter nights! I sauteed 4 carrots, 1/2 onion, 3 celery stalks, and 2 garlic cloves, then cooked the soup according to the directions. I had to add more water with the additional veggies (and a few chicken boulon cubes), but it made a more hearty and filling soup.

Cowboy Casserole

Reviewed: Jan. 24, 2012
Hearty meal. I baked the biscuits on top of the casserole, which cooked the tops to a nice golden brown, but left the bottoms doughy. Next time I'll cook the biscuits seperately and pour the casserole over the top to serve.

Pumpkin Hummus

Reviewed: Nov. 4, 2011
I found this to be very bland, even with the pumpkin spices. But in fairness, I did start with a plain store-bought hummus instead of making it by scratch. I prefer hummus that's really garlic-y though, and since I didn't think that tons of garlic would go well with pumpkin, I bought a plain flavor. The spices and pumpkin puree didn't really add enough flavor for me.

Downeast Maine Pumpkin Bread

Reviewed: Oct. 3, 2011
I added a little vanilla and some ground walnuts, but otherwise kept the recipe the same. It was awesome! Very moist - even a few days later.

Peanut Butter Cup Brownies

Reviewed: Sep. 30, 2011
I followed suggestions and used the brownie recipe from the box for fudgy brownies. I think I would prefer them to be even fudgier - perhaps with a more decadent mix (like Ghardelli as opposed to Duncan Hines). I reduced the cooking time to 24 minutes and it was perfect. I also used foil liners sprayed with floured Pam and didn't have any sticking issues.

Andrea's Pasta Fagioli

Reviewed: Sep. 19, 2011
Easy, simple recipe for pasta fabioli. I normally use 15 oz. diced tomatoes and 15 oz. tomato sauce instead. I also sautee some carrots and celery in the sauce pan before adding the other soup ingredients.

BLT Pasta Salad

Reviewed: Sep. 19, 2011
The salad was good, but next time I would wait to add the bacon until serving. I made this in advance for a camping trip and the bacon was soggy by the time we ate it. Next time I'd keep the bacon seperate and add it before serving.
