Vegetarian Chickpea Sandwich Filling

Good alternative to a traditional tuna filling, but it doesn't hold together as well, so it's best to use a pita or pocket bread.

Creamy Chicken and Wild Rice Soup

Great soup for cold winter nights! I sauteed 4 carrots, 1/2 onion, 3 celery stalks, and 2 garlic cloves, then cooked the soup according to the directions. I had to add more water with the additional veggies (and a few chicken boulon cubes), but it made a more hearty and filling soup.

Cowboy Casserole

Hearty meal. I baked the biscuits on top of the casserole, which cooked the tops to a nice golden brown, but left the bottoms doughy. Next time I'll cook the biscuits seperately and pour the casserole over the top to serve.

Pumpkin Hummus

I found this to be very bland, even with the pumpkin spices. But in fairness, I did start with a plain store-bought hummus instead of making it by scratch. I prefer hummus that's really garlic-y though, and since I didn't think that tons of garlic would go well with pumpkin, I bought a plain flavor. The spices and pumpkin puree didn't really add enough flavor for me.

Downeast Maine Pumpkin Bread

Peanut Butter Cup Brownies

I followed suggestions and used the brownie recipe from the box for fudgy brownies. I think I would prefer them to be even fudgier - perhaps with a more decadent mix (like Ghardelli as opposed to Duncan Hines). I reduced the cooking time to 24 minutes and it was perfect. I also used foil liners sprayed with floured Pam and didn't have any sticking issues.

Andrea's Pasta Fagioli

Easy, simple recipe for pasta fabioli. I normally use 15 oz. diced tomatoes and 15 oz. tomato sauce instead. I also sautee some carrots and celery in the sauce pan before adding the other soup ingredients.

BLT Pasta Salad

The salad was good, but next time I would wait to add the bacon until serving. I made this in advance for a camping trip and the bacon was soggy by the time we ate it. Next time I'd keep the bacon seperate and add it before serving.

Bacon Appetizer Crescents

These were good, but I felt like the crescent roll overpowered the filling. It was hard to roll up enough filling to balance out the crescents though.

Jeff's Chili Con Queso

I followed the recipe as written, except that I added some hot italian sausage to it to make it a bit heartier. To add sausage, remove the casing from one italian sausage and brown the meat while breaking it up into chunks. Then add the meat to the rest of the mixture. I also added a few chopped jalepeno slices to spice it up.

Margarita Cake

I've followed the advice of others and use OJ instead of water and lemon pudding instead of vanilla. Everyone always likes it. It tastes more like an orange Dreamcicle to me than a margarita, but the tequila is a nice balance to the sweetness of the cake. This recipe also makes 24 cupcakes - just reduce the baking time to about 20 minutes and check with a toothpick until it comes out clean.

Three-Berry Lemon Trifle

Everyone loved it, and it's a fairly light dessert. I also followed other reviews and used half-lemon, half-vanilla yogurt, which was just the right amount of lemony flavor. I lightened it up by using a store-bought sugar-free angel food cake, but you didn't even miss the sugar.

Stuffed Jalapenos III

Instead of cutting them in half, I cut a slit down the center and scooped the seeds out with a small spoon. Then I used an icing bag to stuff them with cheese. I also added finely shredded cheddar and used the garden flavored cream cheese. After cooking in the oven, I placed them in a crock pot to keep warm for a party. They were delicious and I'd definitely make them again!

Mom's Zucchini Bread

I followed the recipe exactly and the bread is awesome! I did have to bake it for the full 60 minutes, but I kept checking it after 40. FYI - I used about 3 medium zucchini's to yield 2 shredded cups.

Jamie's Cranberry Spinach Salad

Simple, easy and delicious. You can use walnuts or pecans instead of almonds. I also add blue or gorgonzola cheese. I find the dressing ratio to be a bit off for my taste. I only use 1/4 cup of cider vinegar and leave out the white wine vinegar, but as others have said, any vinaigrette will work here. As a main dish, you can add some grilled chicken chunks.

Buckeye Balls II

I LOVE buckeyes, so I used this recipe as a Halloween idea. After rolling the peanut butter into balls, I stuck 4 pretzel pieces into each one to make the legs of a spider. Then I froze the balls before dunking the whole "spider" in melted dark chocolate. After that set, I used red gel to add eyes. The combination of salty pretzels and sweet buckeyes is awesome...I'm not sure if the spiders are going to last until the party!

Bacon Wrapped Smokies

Awesome! They truly are "meat candy". I didn't bother with the toothpicks and just stretched out thin strips of bacon around the smokies. I cooked them a day in advance, then added a little syrup for extra liquid and kept them warm in a crock pot during the party.

Chocolate Covered Strawberries

The recipe was perfect as-is. I melted the chocolate in the microwave and used the leaves to hold the strawberries while dipping. Parchment paper works great for a non-stick cooling surface. As a tip, DO NOT store the strawberries in an air-tight Tupperware container or the moisture from the strawberries will melt the chocolate and wilt your strawberries.

Caramel Apple Cheesecake

I used this recipe for inspiration but tweaked it a bit using other recipes found on this site. First of all, I used the pie crust recipe for "Healthier Pie Crust". I thought that the oatmeal crust would pair up nicely with the apples. Then I followed the technique used in the "Double Layer Pumpkin Cheesecake" recipe to make the filling. I spread half of the filling onto the crust. Then I mixed in about 1/2 a can of apple pie filling, some spices, and whipped it with the cream cheese. I was able to blend the apple pieces using my mixer, but you may want to cut them into smaller chunks if they are large. Finally, I spread this layer onto the plain cream cheese layer and baked it. I didn't add any apple filling onto the top because it looked moist enough already, but I did drizzle some caramel over the top before baking. Thanks for the inspriation to experiment with different cheesecake flavors!
