Banana Muffins II

Reviewed: Nov. 11, 2008
Great recipe after some changes. I added a dash of vanilla and probably about a cup of walnuts. These weren't quite as big as I like, so I'll probably make 1.5x the recipe next time, so I get those nice pretty crowns that I love on my muffins.

Oriental Cold Noodle Salad

Reviewed: Jun. 14, 2006
This was fantastic. I did it the Japanese way, so I left out the peanuts and cilantro and added seseme seeds. I accidentally forgot the pepper flakes, but will definatly add them next time. Perfect with a rare steak. Great summertime dish, and I can see myself making the sauce for salads and wraps in the future.

Jay's Signature Pizza Crust

Reviewed: Aug. 7, 2004
I've finally found a pizza dough recipe I like! I kept the recipe as it was, except I kneaded in some pizza seasoning into the crust, as well as about 1/4 to 1/3 cup of cornmeal. I think that the cornmeal really helped produce a yummy crisp crust. And this made enough dough (with a litte left over) for a 9 x 11 sheet pan. Thanks Jay!

Scones

Reviewed: Jul. 18, 2004
Oh my goodness! These are great. I cut down the baking powder to 3 tsp. and used half heavy cream, and half skim milk. Took awhile to come together, but once they did, it was fine. I added a dash of cinnamon and nutmeg, and then threw in some dried cranberries and white chocolate chips. Came out fantastic. Not too dry like scones usually are. I can't wait to surprise my boyfriend with these when he gets home.

Homemade Focaccia Bread

Reviewed: May 18, 2004
This bread was really yummy and easy to make. It took less then an hour to put together, and went great with the spaghetti that I made for dinner. I did make a few changes. I added garlic and parmesan cheese to the top, as well as the rosemary. I thought it needed more salt, so next time, I will sprinkle some kosher salt on as well.

Unbelievable Rolls

Reviewed: Feb. 1, 2004
I think I screwed these up. I followed the recipe, but my dough came out so soft that I couldn't shape balls out of it. I did add about a cup and a half extra flour, but was worried that much more might ruin the recipe. Any advice?

Blackened Salmon Fillets

Reviewed: Nov. 10, 2003
I used this to blacken chicken. Wasn't too smoky or anything, just the 'hot' flavor overwhelmed everything else. I will have to play with the spices a bit more for it to have real appeal to us.

Grandma VanDoren's White Bread

Reviewed: Oct. 12, 2003
In the words of one of my friends, "YUMMY!" This does make a massive amount of bread, so I made one loaf, some rolls, and a round loaf that I put melted butter and garlic on. They all turned out great. My boyfriend will be so surprised when he gets home.

Beef Stew VI

Reviewed: Oct. 12, 2003
WOW! This was wonderful. I did have to add extra water, but I think that was because I let it simmer at too high a temp. I also forgot to add the cornstarch, so I just added it when I put my biscuits in the oven, and cranked up the heat and it came out fine. My boyfriend loved it, and since we're both employed as cooks, he is very hard to please. Thanks for the great recipe.

Easy Red Velvet Cake

Reviewed: Apr. 2, 2002
I made this for a friend's birtday and Red Velvet Cake is his absolute favorite. Everyone at the party raved over it, and the birthday boy said that it was the best he'd ever had, and he eats it every year on his birthday. It was really really easy as well.

Ham and Chicken Casserole

Reviewed: Feb. 19, 2002
Finally!! I found a dish to make for my boyfriend that makes him say 'WOW!' when he tastes it. I used elbow macaroni, deli ham, and omitted the celery. I had some leftover mozzarella cheese slices that I tore into pieces and tossed in, and then threw some shredded "mexican cheese" on the top. It was wonderful and we loved it. What's even better is that it was so easy and quick. This will be made at least once a month
