Indian Tomato Chicken

Baked Tofu Bites

I love these. I didn't have sesame seeds, and I omitted the liquid smoke however I would like to use it next time. I wrapped the tofu in paper towel and let it drain (a la Alton Brown) for about 20 minutes. Then I cut it up, marinated the pieces for about an hour and baked them for 45 minutes. I used sriracha for the hot sauce. Will make again!!

Brown Rice Curry

Turkey Enchiladas

This was good! My modifications: I sauteed the onions first, let them cool, added the olives, cheese, southwest seasoning, and some sour cream. I only used 19 corn tortillas. I used 20oz of canned enchilada sauce and thought it needed more so I made some more from tomato sauce and seasonings.

Chicken Tikka Masala

Modifications: I used one tsp salt in the marinade and one tsp salt in the sauce. I also cut down on the cayenne (I will thank myself tomorrow). Served with steamed white rice and enjoyed with a Loose Canon IPA. This recipe is amazing!
