Caramel-Filled Chocolate Cookies

Reviewed: Dec. 12, 2009
I enjoyed making these (very reminiscent of making mud pies as a child), and the taste was amazing (even without the white chocolate), but my hubby and I both have difficulty with our teeth and found these very difficult to eat. Great idea! Thanks for putting the fun into baking!

Serbian Ground Beef, Veggie, and Potato Bake

Reviewed: Dec. 9, 2009
This is a little labour-intensive for me (I cannot stand for long periods of time to chop veggies/brown meat etc.)), but it is so amazing it is sooooot worth it! Nicely done! Marvelous flavour. Even my picky hubby loved it! Thank you! UPDATE: LOVE THIS -- hubby chopped veggies. (I added 2 Tbsp pineapple applesauce instead of the oil, two more potatoes and ... WOWSAH!) Anyway you slice it, this recipe is amazing!

Ice Cream Kolacky

Reviewed: Dec. 8, 2009
I had difficulty deciding how to rate this, so decided to start with 0 stars and work my way up. I loved the idea. (I was curious about the ice cream!) (+1 star). I followed this recipe to a "T", and really enjoyed making them (+1 star), and was quite surprised I did not run into any of the problems listed by other reviewers, such as spreading, messy jam, or sticky dough, or having to add exta flour or milk. Simply awesome and fun to make! (+2 stars). When they were finally in the oven, both my hubby and I were so excited. They looked good and smelled GREAT! (+1 for 5/5). I watched them like a hawk because of others having trouble with baking all the way through. Not the case here. They turned out evenly browned and baked through (an added plus in my book when I can accomplish what others can't) (+1 for 6/5). And very fluffy and nice (+1 for 7/5). BUT When they cooled and were tasted, all the excitement dissipated quickly. They were quite bland(-3 for 4/5) -- until we added the icing sugar, which is not listed in the ingredients and should be. (-1 for 3/5) Not sure we will waste ice cream or money for this again. And for the calorie-wise -- 504 calores for 3 cookies?! That's almost 164 calories per cookie without the confectioners' sugar. Whipping cream and sugar (or maybe even Cool Whip?) might even be better -- at least it will be cheaper. Cool idea, though (No pun intended) -- and I'm always up for experimentation.:D

Scandinavian Almond Bars

Reviewed: Dec. 7, 2009
Marji, THANK YOU! You have brought a very happy memory to life and, if my Norwegian grandmother (who died 30 years ago today, not realizing her dream of making me a baker) were alive, she'd be doing handstands (at the ripe age of 115). I finally made some MARVELOUS cookies (so marvelous that I forgot to make the icing!)! The icing on the cake (no pun intended) is that they were a staple of our Norwegian family, and just the very first recipe that my grandmother tried to teach me. Thank you for the melt-in-your-mouth. almost marzipan, recipe. This will become a regular in our household (even without the nuts, which hubby can't eat -- I made half with and half without almonds). An added plus is that my Canadian-Irish hubby said that they were "sex in a cookie". I had to put them away so that there would be some left for tomorrow. Mange takk, Marji!

Budget Easy Sugar Cookies

Reviewed: Nov. 22, 2009
These are absolutely amazing (although I cheated and used the full cup of margarine -- as we have no butter or shortening)! My husband who has been having teeth problems loves these dipped in milk. They are tender and tasty. Everything one could want in a cookie! Thank you ...

Baked Pancake Squares

Reviewed: Nov. 21, 2009
This is AMAZING ... I did the version with the butter/brownsugar ... but as written the recipe would be awesome, too! For those who said it was bland, do you not realize that pancakes are supposed to be served with margarine or butter and syrup??? The batter is sweet ... I only used 1 1/2 tsp white sugar, 1 tsp of baking powder, and forgot to add the salt. (Good thing... baking powder has enough sodium in it anyway!) Hubby said this goes in my repertoire. Thanks for the recipe! You ROCK! UPDATE: Once again, we were out of pancake mix and (amazingly) we had the ingredients on hand -- Made it again -- without the caramelized topping ... OMG !!!! (as the kids say) Melt in your mouth, absolutely fantastic -- It's easy and fills you up (but it does not feed 16 servings -- okay, so the measurements were made to make it attractive to calorie counters -- it does not make this recipe bad! -- This is definitely a keeper (and so much cheaper then pancake mix!)

Apple Oatmeal Crisp

I am culinarily challenged. so made it exactly as written (as I was craving some comfort food). This was amazing! A little richer than I remembered, but simply amazing! I may cut down on the brown sugar and flour next time, but this was absolutely amazing! Thanks, Dave!

Whole Wheat, Oatmeal, and Banana Pancakes

Reviewed: Oct. 11, 2009
These were very good! I couldn't eat them because of the whole "can't have gluten thing", but I had a tiny bite to figure out if I could feed it to my picky Hubby. He loved them!

Creamed Salmon on Toast

My mother was heart-broken when I told her she hadn't created this one. We also lived on this when I was a kid. I had forgotten it is one of the best comfort foods EVER!
