Pork Chops with Delicious Gravy

I was a little iffy when my boyfriend said he wanted pork chops for Valentine's Day, but I went along with it and dug around for days before finding this recipe. SOOO glad I ignored the negative reviews!!! I made it almost completely according to direction (added fresh minced garlic to the butter), and even after he missed his train and I had to refrigerate and reheat, the chops were excellent. I served with mashed potatoes and sweet corn, and we were beyond happy with our Valentine's meal. In fact, I'm so pleased that I'm making a larger dose for a family dinner tonight!

Easy Baked Tilapia

Quick and easy tilapia dish! I didn't use exact measurements; just poured 1/2t garlic salt, sprinkled it over the fillets until I decided there was enough (I don't like a lot of salt and was worried about using in conjunction with the Old Bay). I sprinkled the Old Bay liberally and added a dash of garlic powder (love garlic!). My family of non-fish lovers enjoyed it and I will definitely be making this again.

Garlic Potatoes

These potatoes were so good! I cut back on the milk a little and added sour cream and butter, and used dried parsley flakes instead of fresh but the potatoes were still very flavorful. Perfection, and I will definitely make again.

Easy Meatloaf

This version was very good, though I forgot to use the garlic powder. I also used less than a whole onion, chopped very finely (I don't like obvious chunks of onion in my meatloaf). It took a little longer than an hour for my meatloaf to finish cooking, but my family was fine with that. I will definitely make again, only next time I will cut the brown sugar down to 2 1/2T. I'm not big on sugar but my boyfriend loved it, so shaving off a little should be enough to satisfy us both. My 15 month old cleared his plate!

Baked Ziti I

This was my very first ziti, and I couldn't have asked for a better recipe. I started off by browning the meat with seasoning salt, minced garlic and freshly cracked black pepper. I cut out the onion altogether and used low-fat mozzarella and sour cream. Oh, and I simply sprayed my Pyrex with olive oil spray. Our grater disappeared so I very thinly sliced down a 6 oz block of mozzarella. I layered everything as described in the recipe, making sure to spread the mozzarella strips evenly. Based off another review, I covered the dish prior to putting it in the oven. What I pulled out...I didn't expect. Amazing. I sent some down to my boyfriend's father, the first thing I'd ever cooked for him except dessert and he raved about it. So yes, this recipe will definitely stay in my rotation!!

Crispy Potato Pancakes

So good!!! I haven't had potato pancakes since I was a teenager and had certainly never made my own, but this recipe was so worth the wait! I changed the recipe to 4 servings but didn't get the egg halo noted by another reviewer. I peeled the potatoes and rinsed well before putting them through the food processor. I dumped them from there into a fine strainer and doused with water and just let it drain out. I skipped the onion. The recipe, for me, actually yielded 6 servings. This one will definitely stay in the rotation!

Lemon Garlic Tilapia

This was an extremely easy and delicious tilapia meal. I followed other reviewers suggestions and sauteed the garlic and parsley in the butter. I used a little more than the recipe called for because I love garlic. I lined up my fillets and poured the lemon juice over them, followed by the butter blend. My fillets took the full half hour, but I made 6 in a 9x13 pan, slightly overlapping. They were absolutely delicious and I will definitely make again. The only thing I may do differently next time would be to mix the lemon juice with the butter mixture, but just to spread the garlic easier.

Spicy Maryland Crab Dip

I chose this recipe as one of the dips for a football party and it was pretty good. The taste was good but a little dry; I think my mistake was putting this into a 9x13 baking dish instead of an 8x8. Next time I will try that, as it really did taste very good and I'm more than willing to make it again.

Pasta Bake

Really, really good! I couldn't find mostaccioli pasta and substituted penne. I forgot an onion and mushrooms so I just worked without them. It was so easy to make this that I felt like I was missing a step. I love melted mozzarella and this made the perfect meal . My toddler demanded seconds! Next time I'll be sure to get the missing ingredients. This was a very welcome change to spaghetti.

Best Ever Blueberry Cobbler

My first cobbler ever was a huge hit with this recipe. I used 4C blueberries and added 1/2t cinnamon to both the crust and filling mixtures. Baked up perfectly and gave a my family a whole new respect for blueberries.

Breaded Chicken Fingers

I've given this recipe to so many of my friends! I marinate my chicken overnight in the buttermilk mixture. I added cayenne pepper and garlic powder to the breading mixture (I didn't measure, just added by eye) and they fried beautifully. The chicken was very tender and the seasoning was absolutely mouth-watering.

Southern-Style Buttermilk Fried Chicken

I used boneless skinless chicken breasts and cut them into chunks. My chicken marinated overnight, and though the double-dipping was work, it was totally worth it. The chicken was tender, the breading was flavorful and crisp. I didn't bother to measure the cooking oil, but there wasn't much. I think I may make this again tomorrow night!

Buffalo Chicken Dip

Love this! I've made it a few times now and have gotten lots of compliments. I've used both Texas Pete and Frank's Red Hot, and both are delicious. I add a little more hot sauce because we like it spicy, and it is so good with wheat crackers. I do use store bought shredded cheese but have never had any problems. I skipped the slow cooker and poured the stove-heated mixture into a 8 in sq baking dish and put into a preheated oven on 350 for 20-25 minutes. Perfection.

Sweetened Whipped Cream

I make this all the time. I never use the whole 3T, usually starting with 1 and increasing as I see fit. I have to admit that making it with chilled utensils and stainless steel bowl makes everything go faster, but I've also made without and everything worked fine. I will never, ever pay for store bought again!

Baked Ziti III

Delicious! I followed the tip of stirring the ziti into the sour cream and cheated by using dried basil (time crunch). I also added more mozzarella - not sure how much because I had a little extra shredded in the refrigerator and just sprinkled into the first layer of cheeses. My bf actually preferred this to the Baked Ziti I, which was also much enjoyed, due to the basil. Next time I will make it with fresh basil and see if it makes a difference, not that this needs any improvement!

Slow Cooker Beef Stroganoff I

Fantastic, with a few changes! This was my first homemade beef stroganoff and it will definitely not be my last. I followed Jilly's changes: double golden mushroom soup; double meat; double water; added 1/2 packet of onion soup mix, a beef bullion cube, fresh cracked black pepper and garlic powder; added sauteed portabello mushrooms during last half hour; added a good scoop of sour cream as I stirred in the cream cheese; served over wide egg noodles. I ran short on time so I started the slow cooker on high for 2 hours, then turned it down to low for another 2.5 hours. Absolute perfection, and there was not a bite left afterward.

Slow Cooker Turkey Breast

Quick and easy! I started the slow cooker at 7 am and left it on high for an extra 15 minutes -this was an accident- before switching to low. My crock pot wasn't tall enough to accomodate the turkey without tilting it onto its side, though I did right it after 4-5 hours. Absolutely delicious! I think I spent more time thinking about cooking it right (this was my first turkey, in any form, ever) than actually getting it done. I will make this again and again.

Todd's Famous Blueberry Pancakes

Very good recipe! I've never made blueberry pancakes from scratch and this was a good way to start. I used fresh blueberries, probably a little more than 8 oz but my family is a blueberry-loving clan. They were very good and fluffy, but something was missing. I think next time I may add a touch of vanilla or cinnamon and see what I come up with. But I will make them again!

Mom's Macaroni and Cheese

Perfect. My first time trying my hand at macaroni and cheese turned out perfectly and I hand it to this recipe. I used a little more than 1C of shredded sharp cheddar cheese but followed the rest of the recipe to a T, and the taste was amazing. I immediately called my mom and told her that I would take over making the mac and cheese for Thanksgiving. My boyfriend actually whispered that mine was better than my mom's, and anyone who had had her mac and cheese knows that's a real compliment!

Cranberry Sauce

This was wonderful! I followed another reviewers tip and used 1/2C white sugar and 1/2C brown sugar. For some reason my cranberries never popped, so I wound up cooking them for roughly 15-18 minutes. Of all the things on my plate, I have to admit that I liked this best. I can't wait to make this for my family on Thanksgiving. So easy - I will never open another can of store-bought cranberry sauce!
