Seafood Lasagna II

Perfect Baked Jerk Chicken

Excellent! Baked legs and thighs and turned out perfectly - juicy and moist. The only thing I changed was the temperature: baked at 380º for 50 minutes due to time constraints. I'll make again, thanks for sharing.

Brazilian Chicken with Coconut Milk

Excellent! Spicy and sweet at the same time. I did everything as per the recipe and it turned out beautifully. The only thing I would try next time, is baking the chicken instead of pan frying. I found the chicken to be slightly dry and baking would ensure a juicier result. Thanks for sharing!

Fresh Tomato Salsa

So fresh! So tasty! I added extra cilantro and two cloves of garlic (I made a double batch) and it was excellent. Kept in the fridge for five days and still good! Thank you for sharing.

Balsamic Roasted Pork Loin

I really enjoyed this! I didn't have enough time to marinate the roast in the fridge (only 1 hour), unfortunately, but I kept basting to ensure the flavor and juices cooked though. I found the meat to be a little dry, but that was my fault as I left it in the oven a little longer than I should have. I'd make this again - thank you for sharing!

Spanish Rice II

I took another reviewer's advice and substituted the water for chicken broth, and added a few mixed beans, but other than that, I followed this recipe as given. It went well with the Quick and Easy Mexican Chicken recipe, and I would certainly make it again, but with the addition of a few extra spices as the original recipe needs a little extra zing (personal preference). Thank you for sharing!

You wouldn't think too much of this recipe if you judged it on ingredients alone, but it turned out not only moist and juicy, but very tasty, too. And, in under 30 minutes. I served with the Spanish Rice II recipe and will be making this dish again. Thank you for sharing!
