Fluffy Pancakes
Just made this following the recipe exactly. Fantastic! So fluffy, and so light! Not heavy and rich at all. This will be my go-to recipe from now on. The only thing is, I'll add vanilla extract. And, this recipe makes about enough for just ONE person. I'll be doubling for two, and tripling or quadrupling for four. THANK YOU !!! for an awesome recipe.

Lamb Tagine
Made it exactly as written. Allowed meat to marinate overnight. Housemate said eyes were watering two rooms away because whatever I was making was so spicy. After test tasting, I ended up doubling the spices and salt. VERY VERY tasty. Really perfect with the cucumber raita. Thank you SO much for sharing. I am in some kind of culinary heaven right now as I eat this.

Cucumber Raita
I made this exactly as specified in the recipe and served it with the Lamb Tangine and Moroccan Couscous as recommended. This dish is a very nice accompaniment to the lamb. This is the first time I've had raita so I have nothing to compare it to. I will be doubling, maybe even tripling the mint in this recipe in the future. As it is written, I have the urge to add dill, but I think a stronger mint flavor sans dill may be even better. The cool cucumber, mint, yogurt, and lemon are just such a great combination! I think dill might weigh it down and make it more like sour cream.
