Very Special Spaghetti Sauce

This is a great base sauce, but I did make some changes. I used 1 lb. turkey sausage and 1 1/2 lb. lean ground sirloin. Used 1-28 oz. can crushed tomatoes and 3 cans diced tomatoes (pureed in blender). I always add creamy tomato soup to my sauce, and did so with this one (It makes the sauce complete - used 1 microwavable bowl). Used only 1 small 8 oz. bottle of cabernet and omitted cayenne. Hard to mess up a good base. Added Italian seasoning. It was perfect!! Will use the rest for the "Baked Ziti III recipe", with ricotta, of course.

Mixed Vegetable Casserole

I have made this recipe for 25 years. It was given to me as a 'recipe wedding shower gift'. My recipe calls for 1 bag 16 oz. frozen mixed vegetables. Seems can veggies may be a little mushy. Delish side dish.

Campbell's® Easy Chicken and Cheese Enchiladas

Wow, this is good. Made a few changes, but very minor ones. I did saute a half onion in a little olive oil then added 3 butterflied chicken breasts. Coated the chicken breast with some taco seasoning. Sliced chicken extremely thin when done, did not shred. Used Herdez medium salsa and enchilada sauce in place of picante. Added a little more sour cream than called for, did not want the cream of chicken taste. Used colby/monterey jack cheese. Made extra sauce (sauce needs to be thick). Taste the sauce before you mix it with the chicken to make sure it's to your liking. Once the tortillas were rolled and in the pan, put the remaining sour cream/crm of chicken sauce on top, along with the rest of the enchilada sauce I had used in the cream mixture (have to have enchilada sauce with enchiladas). Cooked for 30-35 minutes then topped with colby/monterey jack cheese and baked for 10 mins. longer. The kids and husband could not get over how good this was. Raves around the table. It was delicious!!!!! Served with some Steamfresh Southwestern Rice and homemade quacamole.

Fried Okra

Fresh okra made this recipe, which I had from my garden. I did half & half corn meal and flour. All corn meal may have been a little much. Also added milk to the egg and let the okra sit in the mixture for about 4 mins (got idea from another recipe). The corn meal mixture stuck to it perfectly. Cooked on low medium to make sure it did not burn. Perfectly browned on all sides. Flipped with a spatula. I want this again tomorrow night. The perfect southern side dish!!!!!

Neat Sloppy Joes

Made this tonight for dinner and it was delicious! Did not have tomato soup so I used tomato sauce instead. Used celery salt instead of the celery (not my favorite). Did add some chopped jalapenos to give some heat. Added a little mustard to the mix. Served with Neely's cole slaw (Food Network) and tater tots, suggested from another viewer. This was really good for sloppy joes. Not that bbq sauce flavor like a lot of other recipes. Add the mustard, you will love it!

Buttery Lemon Spinach

Made this tonight for the father-in-law. Used 2 bags of fresh spinach, but only 1 1/2 tbsp. butter. Five I believe is way too much. With the added lemon and garlic, you just don't need it... nor all the calories. It was delicious. My father-in-law had double helpings. I would've, but boy does that spinach wilt like crazy. Fresh, delicious, good for you and my husband's heart. Next time, I will try with our Vegan, Earth Balance, Butter substitute. We soooo loved this dish. The lemon was perfect.

Mushroom Rice

Had this tonight with the steamed spinach (in a microwave) recipe from this site and a chipotle chile chicken recipe I have. I used 5 minute white rice. I sauteed the mushrooms, white onions (not green), and garlic until pretty much done in vegetable spray (not butter). I added my vegetable broth (not chicken) to the same pan with mushroom mixture while coming to a boil. Then let the rice sit for 5 minutes in broth off the stove. Please watch your rice, if it sits too long, it will become mushy. This was delicious. Light and flavorful. We all enjoyed it. Would make again and again.
