Delicious Enchiladas
About this Cook
I've been married for 25 years and have two sons, 20 and 23 years old. One has graduated college and the other is a junior in college. I can't say I'm one of those who love to cook, but I do enjoy making new recipes and challenging myself when I'm in the mood to go all out for dinner. I play tennis and have been for 10 years. The whole family plays tennis and my boys were brought up playing in junior tennis tournaments around SC and NC.
My favorite things to cook
Enchiladas is one of our favorite meals. Time consuming, yes, but so worth the time. So delicious!
My favorite family cooking traditions
I'm a mom of two boys. For years we have made our own pizzas. I chop all the vegetables, put the cheeses and put all the different meats in separate bowls. We then make our pizzas the way each of us want them. We do the same for sushi. Much harder, though!

Mushroom Rice
Had this tonight with the steamed spinach (in a microwave) recipe from this site and a chipotle chile chicken recipe I have. I used 5 minute white rice. I sauteed the mushrooms, white onions (not green), and garlic until pretty much done in vegetable spray (not butter). I added my vegetable broth (not chicken) to the same pan with mushroom mixture while coming to a boil. Then let the rice sit for 5 minutes in broth off the stove. Please watch your rice, if it sits too long, it will become mushy. This was delicious. Light and flavorful. We all enjoyed it. Would make again and again.

Buttery Lemon Spinach
Made this tonight for the father-in-law. Used 2 bags of fresh spinach, but only 1 1/2 tbsp. butter. Five I believe is way too much. With the added lemon and garlic, you just don't need it... nor all the calories. It was delicious. My father-in-law had double helpings. I would've, but boy does that spinach wilt like crazy. Fresh, delicious, good for you and my husband's heart. Next time, I will try with our Vegan, Earth Balance, Butter substitute. We soooo loved this dish. The lemon was perfect.

Neat Sloppy Joes
Made this tonight for dinner and it was delicious! Did not have tomato soup so I used tomato sauce instead. Used celery salt instead of the celery (not my favorite). Did add some chopped jalapenos to give some heat. Added a little mustard to the mix. Served with Neely's cole slaw (Food Network) and tater tots, suggested from another viewer. This was really good for sloppy joes. Not that bbq sauce flavor like a lot of other recipes. Add the mustard, you will love it!
