Seafood Enchiladas

A very good recipe to play with. I did it as is and I could see using it to make a rich seafood lasagna because the parsely and garlic gave it an almost italian flare. I will use cilantro and maybe use it as a filling to chile rellenos. For enchiladas, it does need tweaking. It needs a little chopped garlic, a good asadero or monterrey jack cheese, cilantro and green pepper of some kind (A poblano, green chiles, or jalapeno). I will keep this recipe but as is I would rate it 3 1/2 stars because its a good base recipe

Sam's Famous Carrot Cake

Made the recipe but used a 1/4 oil and half cup applesauce instead of the 3/4 cup oil. Other than that we stuck to the recipes and my husband loved it. This one is a keeper. *Made a cream cheese frosting using a stick of 1 stick of real sweet cream butter, 8 oz pkg of cream cheese, 2 cups powdered sugar, and 2 tsps vanilla extract.

Mini Pineapple Upside-Down Cakes

A very good recipe as is. I made this again but used butter recipe cake mix and used real butter to make the cake. No pineapple juice. I used a can of crushed pineapple mixed with real sweet cream butter and brown sugar and used whole cherries for the center. The second one was great too with the hints of butter and it wasnt too sweet.

Homemade Flour Tortillas

Made this recipes as is they were ok. Dough was a little too sticky. Second time around, I cut the water to 1 cup, upped the salt to 2 teaspoons. My grandmother used really hot water and let the dough rest covered in a bowl for at least 30 minutes before forming into balls. I did the same and found its much easier to work with and flavor and consistency were much better.

Mouse's Macaroni and Cheese

Thought this was very good. I made two different trays. One with American cheese and the other with Sharp Cheddar. The one with the american cheese tastes almost like Velvetta shells and cheese from a box. The one with sharp cheddar had a nice flavor. Liked both of them. I added shredded cheese instead of bread crumbs. I baked uncovered in the oven to let the cheese brown. Cant go wrong either way. I also made this with penne pasta noodles since they are a bit thicker and macaroni can get mushy if over cooked or saved for the next day.

Turkey Dumplings

This needs alot of help. I started with left over turkey. I used a can of cream of mushroom and a can of cream of celery. I added potatoes, carrots, chopped onion and herbs. Salt, pepper and a few herbs. I cooked it alll in pot on meduim until the veggies were done and then dropped in cut up squares of refrigerated biscuit dough. Cooked those for 4 minutes and it was all done. Quick and Delicious.

Chicken and Dumplings III

I thought this was very good. I added a few chopped potatoes, carrots, celery and onion and a few herbs. I used cream of mushroom and chicken since that was I had on hand. I wil try the cream of celery next time and see which I prefer. I did use the Grands Biscuits and had really good results. I didnt flatten then. I just cut them into square and dropped them into the pot. TAfter about 4 minutes they puffed up really big and were so good. Everyone kept grabbing them as I was pulling them out of the pot. The hubby insists this go into our rotation.

Sweet and Salty Caramel Apples

This is soooo much better rolled in pretzel pieces than just plain coarse salt. The pretzels paired with the chocolate and caramel made these wonderful!

White Cheese Chicken Lasagna

Very good recipe. I tweaked it a little as suggested by other reviewers by adding a little more garlic to cheese mixture. I seasoned then slow baked my chicken covered in the oven so it fell off the bone and used the broth from it. Also, I sauted a little onion, garlic and chopped mushrooms together and mixed with the chicken for easier layering. I cut out most the ricotta to save on the richness. Came out great and got me thinking what a good pizza these ingredients would make.

Fresh Strawberry Upside Down Cake

I made this cake for my family last night and it is wonderful. I used the butter recipe cake and left out the marshmallows because i dont like them. Also after i crushed my strawberries, they were still pretty dry so i added just a sprinkle of water. I topped mine with vanilla ice cream. It would be great with whipped cream also. Definitely a keeper!

Melt In Your Mouth Pumpkin Bread

This was sooo good. I only had one box of instant banana pudding on hand so thats what i used. I also added the suggested baking powder, cut some oil and baked it 15 minutes longer. I will definitely make this again.
