Frank's Spicy Alabama Onion Beer Chili

Frank, I love this chili. I have made it several times, and just made it last night again, but had to change it a little due to lack of ingredients. I only had one can of diced tomatoes, so added one can of rotel cilantro and lime diced tomatoes. I had one pound of ground turkey and just less than one pound of sirloin steak chopped in small pieces. I didn't want to go to the store, so had to make do with what I had. My beer was Yuengling and it worked out great. We like spicy, but not to hot, so added 1/4 cup chili pepper and several dashes of hot pepper sauce (chihula sauce), no pepper flakes or jalapeno peppers, just some shakes of red pepper. My beans were one can of pintos and one can of kidney. Many changes, but so similar to your recipe. It turned out great and I just wanted to let you know that these small changes can still produce a great chili. If you have a large group to serve, you can also cook a pot of white rice and serve the chili on top - really can feed a crowd. I have college age kids and friends and am always looking for ways to feed a lot without too much expense. Everyone raved about the recipe on a cold evening. Update 3/17/14 I am still making this delicious chili and found that a stout beer is the best to use. I follow the recipe as written except for adjusting the spices down a little for our taste. I still get great reviews when I serve this. Thanks again!

Slow Cooker Baby Back Ribs

The ribs were sooo good! Cooked exactly as written, just added 1/2 cup apple cider vinegar to the water, and a few dashes of liquid smoke. Everyone loved these.

Holly's Chicken Cordon Bleu Casserole

Excellent! I followed directions, but instead of layering, mixed it all together with the soup, etc, then poured into a casserole dish with some crumb mixture on the bottom and the crumb mixture on the top. The chicken was in cubes, like the ham. It turned out great! Definitely a do-over for my family.

Easy After Work Chicken Francaise

This was sooo good. Followed almost exactly, added a couple spices, and had to use beef broth as I was out of chicken, but it was great. I always try to make extra for lunch the next day, but my husband ate it all!! Definitely try this one.

Salsa Chicken

Cooked in the crockpot and it was excellent! Used Pace medium picante sauce. Cooked on low for 7 hours. So easy and so good! Served with mexican rice and black beans.

"Pantry Raid" Chicken Enchilada Casserole

This was a surprise hit! Everyone loved it. In true pantry raid style, I had to sub petite diced tomoatoes (I had no tomato sauce) and it turned out great. I mashed them up to try for a more 'tomato sauce' consistency. Everything else exactly as written. I will make this one regularly.

Chicken Piccata with Artichoke Hearts

This recipe was awesome. I did have to change it a little, but the sauce is what makes it and I loved it. I was preparing the chicken and realized I had no artichokes, who took them! haha So, I opened a can of portobella mushrooms and added some sun dried tomatoes instead, and it turned out fantastic. I added more garlic than recommended because we love garlic. I was great, highly recommebd.

Down Home Baked Beans

Excellent! Followed directions exactly the first time, wouldn't change a thing. The second time, after cooking bacon, onions, I put it all in the crock pot for a few hours on low and it was just as delicious! I used canned pork and beans from Sams as they are not flavored like many of the other baked beans that already have sugar, bbq and spices mixed in. The sugar and chili sauce made an excellent flavor combination. I make double recipe and always take to events as my contribution and get rave reviews. Update: This time I sauteed the onions in the bacon grease as a couple people didn't like visible onions. Turned out awesome. A never fail recipe.

Pineapple Grilled Pork Chops

We really loved this recipe. I only marinated 3 hours. I added some grated ginger, kept the marinade and added some cornstarch/water to thicken it on the stove. It made a wonderful thick marinade to brush on the chops while on the grill. This is definitely an addition to our rotation. Thank you!
