Asparagus, Potato, and Onion Frittata

My family loved this recipe. I used frozen O'Brien hash browns (with onion and peppers already mixed in). I cooked it in a skillet that can go in the oven, so after all was mixed together, just used the one pan for the oven. Since the skillet was hot, it didn't take quite as long to cook. I will make this again, especially when we have company spend the night. I believe you could also sub broccali and add in some mushrooms if you would like. Very good!

Slow Cooker Baby Back Ribs

The ribs were sooo good! Cooked exactly as written, just added 1/2 cup apple cider vinegar to the water, and a few dashes of liquid smoke. Everyone loved these.

Excellent, even though I used 1/2 and 1/2. I think next time I will add a dash of white wine or sherry to the sauce, maybe add broccali. My whole family loved this one.

Chicken Lo Mein

Excellent. Followed mostly as written, just doubled soy sauce marinade. I wanted to add extra linguine to feed more, and it turned out great! Didn't have snow peas, so added broccali. I got great reviews from everyone and it is definitely a 'do-over' dish.

Country Fried Steak and Milk Gravy

This was awesome comfort food. I took others advice, used milk and broth (I had beef broth) for the gravy, along with a little more spice (red pepper). I have been trying to cook healthier foods for my family, but when my almost growm boys asked for meat, I gave them this. It was a huge hit, they gave it their best ever compliments! haha, of course! It is a must on my rotation from now on. Thank you

One-Dish Chicken, Vegetable and Rice Bake

I used golden mushroom soup and added a layer of panko with the cheese on top. Really good, the whole family loved it. I put some broccali and carrots with the liquid mixture. Good comfort food. Will definitely make again, maybe add extra rice next time. My crowd can eat!

BLT II Dip

This was great, just like blt! I cut the recipe to serve 16, halved everything, just as written. Will definitely include this in my appetizer choices. I may try fire roasted tomatoes next time as someone else suggested. However, this is great just as is.

Very good and easy. I added some broccali and really enjoyed it. Served with angel hair pasta. Next time I may try adding extra lemon juice or even a few shakes of red pepper. I did use marinated artichokes, as that was all I had. Would definitely recommend this recipe!

Chicken Breast Cutlets with Artichokes and Capers

This was excellent! Followed as written, added extra lemon (because I love the flavor) and at the end, to thicken up a bit, added 1/4 cup mozzarello and 1/4 cup parmesan. Could add more to make it thicker. Wonderful!

Momma's Cornbread Dressing

I made this last week to test for Thanksgiving and really loved it. I sauteed the onions, celery in butter. Also cooked a chicken breast and shredded it to put in the dressing, and since I was not cooking a turkey for broth, used canned broth. I added some crusty bread pieces to the cornbread. Used the hard cooked eggs, but also added an uncooked egg to the dressing. It was really good and will be on my menu for Thanksgiving coming up soon!
