Banana Split Bars

Reviewed: Oct. 4, 2009
As other reviewer's did, I made half the recipe and used a store bought pie shell...I chose a chocolate oreo crust. Instead of walnuts on top, I spread "wet walnuts" over the cream cheese layer. It was delicious...the cream cheese layer makes it very rich! For those who wanted it extra sweet, we drizzled with chocolate syrup. Everyone loved it!

Peanut Butter Cupcakes

Reviewed: Apr. 19, 2010
Delicious! I used oil instead of shortening, only because I have found that in doing so you are gauranteed a moist cake...which it was. This is not a very sweet cake. I frosted these with Rich Chocolate Frosting, but felt that it was too sweet for this cake. Next time I will dip the tops in a ganache, so that the chocolate does not overpower/hide the peanut butter in the cake.

Oatmeal Whoopie Pies

Reviewed: Jan. 25, 2010
Delicious! I baked the cookies fro about 10 minutes...they didn't look done but the edges were brown. Once the cookies cooled they were perfect and chewy. Very similar to a Little Debbie Oatmeal Cream Pie!

Terry's Texas Pinto Beans

Reviewed: Nov. 18, 2009
I soak the dry pintos overnight in water. In the morning I drain them, then put evertything in the crock pot on LOW all day (9-10 hours). I usually just use red salsa (bc I always have it on hand) add at least one can of water.

Bacon and Tomato Cups

Reviewed: Nov. 18, 2009
YUM! Kinda reminds me of a BLT without the lettuce. Watch them closely, mine weren't burnt on the bottom but the biscuit was a little more "done" that I would have liked.

Mexican Cornbread II

Great recipe. Substituted Rotel (Mexican tomatoes and chiles) for the green chiles (bc I didn't have any on hand). Also baked mine in muffin pan...made 12.

Special Buttercream Frosting

Reviewed: Sep. 5, 2009
I made this recipe as written, but 4th it since I was only using it to top a pie (my version of a french apple pie). It was delicious! Nice stiff consistency...tastes like the buttercream used at the bakery. Yum!

Rich Chocolate Frosting

Greeaaatttt chocolate frosting. Rich and creamy. I used this to frost peanut butter cupcakes, but it was a little too sweet for that. Will definitely make this again, but use on white or devils food cake. YUM

Simple White Cake

Reviewed: Jan. 30, 2010
Just as the title suggests...a simple white cake. My cupcakes came out great. Yum! It is a dense cake...not dry and crumbly but not a really moist cake either.

Slow Cooker Chicken and Dumplings

Reviewed: Nov. 21, 2009
Great chicken and dumplins! I halfed the recipe and made a few small changes...didn't have an onion so I used onion powder, instead of all water I used one cup of water and 2 cups of chicken broth, and I added black pepper and garlic powder. Cooked on LOW for 6 hours, then turned to HIGH for 30min when I added the biscuits. I rolled each biscuit flat, then cut each into 6 pieces. Before you add the biscuits it looks like there is alot of liquid, but the biscuits absorb some of it and make it thicker...mine turned into the perfect consistency. I will definitely make this again!

Per other reviews, I let the sausage come to room temp, then mixed with bisquick and added the cheese last. You can't go wrong with sausage balls!

Apple Squares

Reviewed: Nov. 18, 2009
Absolutely delicious! So moist...I thought they were even better the next day. I cut back on the white sugar and only used 1/4 cup, still used 1/2 cup brown sugar. Added 2 cups of apples (per some other reviews) and omitted the walnuts bc I didn't have any. Baked in an 8inx8in glass dish for 40 minutes. Will definitely make this one again! If serving to guests, I might drizzle with a confectioners sugar icing.
