Chewy Coconut Cookies

Reviewed: Aug. 10, 2009
Couldn't quit eating these..and I'm not even a big fan of coconut! Soft and chewy. Great recipe as is, but might try adding mini choc chips next time.

Jen's Heavenly Egg Salad

Reviewed: Aug. 18, 2009
Great egg salad recipe...Didn't have onion, so I added sweet pickles instead. That was the only change. Will definitely make again!

French Coconut Pie

Reviewed: Aug. 23, 2009
This was my first attempt at a "custard" pie..and the first time tasting one too! I thought it turned out great. I used regular milk instead of buttermilk bc I didn't have any, and substituted walnuts for pecans bc that was what I had on hand. Definitely suggest covering the crust for half of the cook time. Great recipe!

Frosted Banana Bars

Reviewed: Aug. 24, 2009
Cut the recipe in half and baked it in my 9in spring form pan for 25 min. Turned out moist and delicious! Used the cream cheese frosting II that other reviewers recommended and topped with chopped walnuts...made for a very RICH dessert!

Cream Cheese Frosting II

Reviewed: Aug. 24, 2009
Very rich, but delicious! I halved the recipe to top the Frosted Banana Bars from this site, and had plenty left over....wish I had something else to frost! Added more sugar, but couldn't get it to a thick consistency like I wanted.

Mall Pretzels

Reviewed: Aug. 30, 2009
This was my first experience using yeast, and I think it turned out really well...especially for the first try. These pretzels are delicious and so easy to make! Topped mine with butter then tried them two different ways: cinnamon/sugar, and grated parmesan/garlic.

Special Buttercream Frosting

Reviewed: Sep. 5, 2009
I made this recipe as written, but 4th it since I was only using it to top a pie (my version of a french apple pie). It was delicious! Nice stiff consistency...tastes like the buttercream used at the bakery. Yum!

Peanut Butter Bars I

Reviewed: Sep. 13, 2009
Chocolate and peanut butter = the best combination ever! Just like Reeses, but maybe a bit sweeter. Very easy! I made half the recipe and used an 8x8in pan, and was able to cut it into 16 bars. Next time I will line the pan with foil or plastic wrap, so that I can remove them from the pan, then cut into squares (I had some trouble getting the first piece out and the corners). I might double the chocolate layer next time too.

Mexican Cornbread II

Reviewed: Sep. 28, 2009
Great recipe. Substituted Rotel (Mexican tomatoes and chiles) for the green chiles (bc I didn't have any on hand). Also baked mine in muffin pan...made 12.

Banana Split Bars

Reviewed: Oct. 4, 2009
As other reviewer's did, I made half the recipe and used a store bought pie shell...I chose a chocolate oreo crust. Instead of walnuts on top, I spread "wet walnuts" over the cream cheese layer. It was delicious...the cream cheese layer makes it very rich! For those who wanted it extra sweet, we drizzled with chocolate syrup. Everyone loved it!

I sliced my apples, leaving the skin on. It made a thick caramel-like sauce. So delicious!!!

Apple Squares

Reviewed: Nov. 18, 2009
Absolutely delicious! So moist...I thought they were even better the next day. I cut back on the white sugar and only used 1/4 cup, still used 1/2 cup brown sugar. Added 2 cups of apples (per some other reviews) and omitted the walnuts bc I didn't have any. Baked in an 8inx8in glass dish for 40 minutes. Will definitely make this one again! If serving to guests, I might drizzle with a confectioners sugar icing.

Very moist and yummy. I only use cinnamon and nutmeg...never have cloves and ginger on hand. Haven't met one person who doesn't love this bread!

Sausage Balls

Reviewed: Nov. 18, 2009
Per other reviews, I let the sausage come to room temp, then mixed with bisquick and added the cheese last. You can't go wrong with sausage balls!
