Original Chex® Party Mix

If you're looking for the true "original" Chex mix recipe, folks, this isn't it. The original recipe was slow-baked in the oven, didn't have bagel chips, and had enough butter so that the spice blend would actually stick to the snack ingredients. My daughter followed this recipe (as posted on the box), thinking she'd end up with our favorite snack, and we ended up eating warmed-up cereal and nuts, and wiping our fingers along the bowl to get the spices. Don't change a great thing, General Mills...and then call it the "original." This is far from it.

Microwave Caramel Popcorn

Thanks for the recipe (and the helpful reviews) everyone! Here are my adaptations: I picked out the unpopped kernels, then divided the popped corn into two large bowls. When I made the syrup, I used salted butter, so I omitted the salt. I used dark brown sugar, because that usually yields a better "caramell-y" flavor and color than using light brown sugar (more molasses left in!). I also waited to add the vanilla until both the initial cooking times were done, since I know in many other recipes that the vanilla extract doesn't go in until after the heating process. I divided and poured the syrup mixture over the popcorn while it was in the two bowls, so I could better distribute the caramel syrup evenly over the corn than it would have been if I'd done that in the paper bag. I sprayed the inside of the paper bag, as suggested, and the finished popcorn came out beautifully. This turned out to be a great idea for a quick party appetizer because I could make in little time, with ingredients I had in my pantry. I sampled it as it layed out to cool, and it tastes spectacular! Now the only work I have left is to stay away from it, so I have something to bring to the party besides a stomachache and a guilty look on my face! :D Yummy!

Deer Chop Hurry

This was incredible! I followed the ingredients exactly, except I used about 1/8 cup of dehydrated onions in place of the onion (it was all I had left in the kitchen). As I fried up the meat in the skillet, I decided to try doing the whole thing on the stovetop; I mixed up the sauce, spread it on top of the meat in the skillet, and covered the skillet. I turned the heat down to 5, and let it cook for about 20 minutes without stirring. The sauce thickened up wonderfully, and I didn't have to wait the long hour to get it done in the oven!

Pesto Cheesy Chicken Rolls

Super! I used a small jar of basil pesto and 6 chicken breasts. For the cheese, I simply rolled one piece of string cheese into each piece of seasoned chicken, and it rolled/baked/tasted like a dream! I spread the tops with a little more pesto, and they turned out fantastic! I used another's advice and baked them at a higher temp for 20-25 minutes. They were cooked completely in that amount of time. I was planning on getting a photo of the finished (beautiful) product, but they left the pan so quickly, I never had time! Thanks for sharing this great recipe!

Venison Bacon Burgers

Sensational! I fried up a whole pound of low-sodium bacon, chopped it up fine, and added most of the bacon grease to the burger mixture. (I had a bit more than 2 lbs of venison, and didn't think the extra bacon flavor would hurt!) I hand-formed them into beautifully thick burgers, and they grilled up perfectly--so incredibly juicy! The only thing I actually left out was the salt--I figured the bacon would have that area covered well enough. Outstanding recipe! Thanks for sharing!

Crab Legs with Garlic Butter Sauce

Absolutely stellar recipe! I doubled all the ingredients, and then added an extra 1/2 cup of butter besides, just because we love having extra sauce for dipping, if possible! :) THIS is how I'm going to make snow crab legs from now on! I might try using a bit of red pepper flakes next time, for a little more heat...but it was super as-is!

Chai Tea Mix

I cut the sugar down to just 2 cups, used scant tsp. of ground cloves, scant half tsp. of cardamom, and added in about 1/4 cup of organic cacao powder. The result was a heavenly concoction that even my youngest kids ask for on cold winter days! Yum!

Baked Scallops

So easy! So fabulous! I used the biggest scallops I could find, dried them off with a thirsty towel, found a baking dish that was just big enough to hold them all, and used all of the ingredients as the original recipe called for. I DID let them bake for an extra 4-5 minutes, because of their size, but they turned out just beautifully. Served 'em up with whole wheat linguini that had a splash of extra virgin olive oil, and about 3 tsp. of Bay seasoning--it was perfect!

Grilled Salmon I

Fantastic salmon recipe! I seasoned the fillets, then let them sit in the plastic bag for 1 night without the marinade. The following day, I added the marinade, and grilled them up that afternoon. (I used my Foodsaver to "quick-marinade" the meat...works wonderful, and does the overnight job in about 20-25 minutes!) Thanks for sharing this great recipe!

Grandma's Lemon Meringue Pie

I thought, for the most part, that this was not too bad. What lowered my rating was the variance in lemon juice/zest that could happen. For example, I used rather large lemons, and my pie was really heavy on the tart side--I would not have used so much lemon juice/zest as the recipe called for. I'll look into some other lemon meringue pie recipes and see if I can find one with accurate juice/zest measurements.

Maple-Mustard Country-Style Spareribs

Delicious! I doubled everything except the Tabasco (used 3 tsp. of that), and it was phenomenal! I followed the advice of Donna Condo to make them in the oven, and the time and temperature was just right. Doubling the sauce ensured that the meat was fully covered as it cooked. Everyone in our family enjoyed it; we'll be making these again, either indoors or outdoors, for sure!

Pasta Pizza Venison Bake

We liked this; I added green peppers, a blend of my own pizza spices, black olives, some leftover bacon pieces and made it into a "supreme-style" pizza casserole! Easily tweak-able to meet your family's pizza taste preferences!

Cheeseburger Soup II

This was alright...I added some shredded sharp cheddar because I was thinking that it would need a bit more of a kick than just with the processed cheese...and I was right. The family enjoyed it, but I will most likely tweak it further, with more flavorful ingredients, the next time I make it.
