Banana Pancakes I

Excellent recipe. I may not have put enough sugar because I felt like they needed a little more. Soft and delicious definitely a keeper recipe.

Chuck's Favorite Mac and Cheese

Fantastic! I was craving greasy fast food so I made this to contain the craving. Definitely fulfilled what I wanted. I did not have cottage cheese so I used plain yogurt and still delicious! I will be making this everytime I crave Jack in the box! Btw also good with tapatio if you like spicy :)

Urban Legend Chocolate Chip Cookies

wow! Haven't had a homemade cookie this good in a long time. My 2 and 4 year old helped me make these, followed recipe exactly except we used margarine and the whole bag of chocolate chips. Super chocolately and so chewy good. This is my new oatmeal chocolate chip cookie recipe!

Oatmeal Pancakes II

So good! Used whole old fashioned oats and still cooked up nicely. You can just mix everything in a bowl and they will still be delicious. Really a no fail recipe. Today I will grind up the oats to a fine powder for a smoother pancake.

Breaded, Fried, Softly Spiced Tofu

Not a typical tofu eater. Tried this recipe because we are trying to incorporate less meat and more protein foods into our diet. Plus my youngest is allergic to pretty much everything. I altered a little with rice flour & used cornstarch. no cayenne pepper. They came out crispy and needing a little salt but good. I will probably use a soy sauce/ lemon mixture to dip them into.

Chewy Chocolate Chip Oatmeal Cookies

So delicious! I was out of brown sugar so I replaced with 1 1/4 cup white sugar. I also only use whole wheat flour. Cook best if you keep them to a 1 1/2 inch size when scooping on cookie sheet. Oh and I mixed with a fork no blender. Came out soft in center, crunchy on the outside.

Cheesy Vegetable Lasagna

Excellent alternative to your usual lasagna and so easy to make. I like to use whole wheat pasta. I soak the pasta for 20mins in hot water then drain water and pat pasta dry with paper towels before using in recipe. Leaves the pasta soft but not too soft is tears when handling. Also I added baby bella mushrooms to give it a meaty taste.

Delicious Ham and Potato Soup

Simply delicious! Prepared recipe just as it is, but found that I didn't need to add salt. The chicken bouillon was plenty. So so good. If potatoes weren't so carb heavy I'd probably have it every week. Actually will probably make it every week since it's all ingredients I stock in my pantry anyway.

Pork Chops Stuffed with Smoked Gouda and Bacon

I used Costco boneless chops and grilled on stovetop to give it color then baked in over for 40 mins. Having never tried gouda before I didn't know what to expect. The cheese is delicious but I may have over stuffed because after a few bites, the cheese was a bit too much for me. Will probably make again but with a different cheese that also melts easier... maybe something simple like monterrey jack. BTW my family was very impressed with me. Hubby thought it was ok, he's picky & didn't care for the cheese. The pork cooked nicely in oven and was super moist.

Spaghetti Carbonara II

I have never had spaghetti carbonara before so I didn't know what to expect. I figured it would be good since the recipe includes 3 of my favorite ingredients: pasta, bacon & eggs. Definitely a good, cheap & easy recipe. The real test is when my husband comes home. If he likes it I'll raise my rating to 4 stars. Update: Husband loved it.

French Toast Casserole

Eggcelent! Just make sure all the bread is evenly soaked in mixture. If some is more soaked it will come out soggy, if not soaked will come out dry & hard. So so good. Cooked in 7x11 glass dish for 50mins @350
