Pumpkin Turkey Chili

Spiced Pumpkin Seeds

Tangy Cucumber and Avocado Salad

Followed the recipe to the letter except for black pepper since some of my family have bad reactions to that. This was very easy, very refreshing and a great addition to summer options. I followed the advise of other reviewers to make sure you have firm avocados that aren't overripe. I had no problem with browning of the avocado. Will make again & again.

Addictive Sweet Potato Burritos

I really liked these. I used whole wheat tortillas and a dried bean mixture (cooked) cause that's what I had on hand. Alittle less water would have made them less soggy on the bottom. I mixed the mashed sweet potato into the bean mixture to thicken it cause it seemed too watery. The total mixture made 13 burritos with extra filling. Probably could have gotten 16 with less filling, making them easier to wrap. Very unique taste.

Roasted Beets 'n' Sweets

Mom's Zucchini Bread

This makes great zucchini bread. I baked it in jars and have kept them in the root cellar and it still is moist and delicious. Not an FDA recommended method but allows for fresh zucchini bread all winter long.

Gourmet Sweet Potato Classic

This is very similar to the sweet potato pudding (the word casserole is an immediate turn off in my family) that I have to make at every family holiday meal. If you increase the butter/margarine, you can eliminate the milk/cream. I have used 1/2 sugar, 1/2 honey with good results. I put it in a cake pan for thinner pudding and more topping. One year when I didn't make this, I was in deep trouble--never skipped again. This is made the night before the big holiday meal (usually with the cooks drinking wine)and is very forgiving if the measurements aren't exact.

Mexican Whole Wheat Flour Tortillas

Ice Cream Base

I never tried making ice cream before but have chickens and pheasants so have plenty of eggs. Use twice the amount of pheasant egg yolks since they are smaller. Added 2 teaspoons of vanilla and then used the "no machine" method. It worked great and tasted better. We started making it at about 1p in the afternoon and it was ready by 7p for dessert after dinner.

Savory Venison Meatloaf

Amazingly delicious. Better than beef meatloaf. Used triscuits, cause that's what I had on hand. Pretty much made it as described and the boys went back for seconds and thirds.

Easy Canned Venison

This is my familys favorite way to eat venison. I use this to make stew which is so easy with this canned venison compared to fresh. I also use it with gravy over noodles or rice. I use quart jars and at my altitude, 90 minutes is recommended by the manufacturer of my canner. I use onion soup mix and garlic to coat the cubes before they go in the jar.

French Toast Casserole

I made this pretty much as is, Christmas morning. It was okay. Took longer than I would have liked for a Christmas morning dish. After reading some of the other reviews, I think preparing it the night before would help as it would give the egg mixture a better chance to soak into the bread. Mine stuck to the pan alittle so I would be more generous with the buttering of the pan. I think this would also be good with some blueberries or other fresh/frozen fruit. Mine was alittle goopy in the middle so a longer baking time might be needed depending on your oven.

Rhubarb Ketchup

Wasn't sure if the tomatoes should be strained so I did strain them slightly. In the future, I'd strain them thoroughly. It took several hours for the liquid to boil off and the mixture to thicken. In the end, it burned alittle on the bottom so the flavor may have been affected. Will try again but with this change. The flavor is good and a good alternative to traditional rhubarb sauce.
