Autumn Harvest Cookies

Delicious! I did not have orange extract so I left that out. I also substituted 1/2 of the butter for pumpkin puree to save some calories and add an extra element of "fall" and they turned out really well.

Cranberry Muffins

I am not sure what went wrong, but I did not care for these muffins. I did substitute the oil for unsweetened applesauce, but I do that in ALL of my baking and I have never had a problem. Maybe it was the combination of applesauce and OJ. Whatever it was, I do not suggest this recipe, at least not if you want to sub out the oil.

Addictive Pumpkin Muffins

I sub out the cloves and use pumpkin pie spice instead (doubled the amount though), always use egg whites, and only bake for about 20 mins. I have made them plain (without raisins and walnuts) as well as with chocolate chips as variations and they are amazing. I also decrease the sugar by 1 - 1/2 cups. Doing this plus using egg whites and no raisins, walnuts, or choc. chips brings them down to about 150 cals/muffin.

Egg-Free Low-Fat Oatmeal Cookies

Great low fat/low cal cookie. I made exactly 24 (small cookies). I used splenda, whole wheat flour, sugar-free applesauce, and baking soda instead of powder. Cookies were delicious and I calculated about 50 per cookie.

Oatmeal and Applesauce Pancakes

I love oatmeal and I love applesauce so I couldn't wait to try these but I thought they were very bland. Granted, I did not have sour cream so I substituted 1/2 c light vanilla yogurt and also added extra cinn, but still very bland. FYI - they are also very dense and take a while to cook.

Pineapple Chicken Tenders

Delicious! I used whole chicken breasts and saved the remaining marinade. I boiled it out (very important, as other users noted), then added one diced green pepper and a diced onion. I then added the marinade/pepper/onion to plain white rice and made it our side. Basically I was too lazy to do skewers, but I wanted the peppers and onions. Also served with a side of fresh pineapple.

Classic Bran Muffins

I sub 1T lemon juice + light soymilk for the 1c buttermilk; 1 mashed banana for the oil; and about 3/4 c blueberries/raspberries instead of raisins. I also added 1/2 t cinn. Delicious.

Peach Cobbler II

I've made this twice. Once, with the recommended 9 peaches, and it overflowed all over the oven. The second time I used 7 peaches, but that was too short on fruit. Use the 9 peaches and place a baking sheet on the rack beneath your cobbler to catch the overflow. Also, I recommend white over whole wheat flour for the biscuit. Great recipe.

Baked Soy Lemon Chops

Great flavor. I threw this in the crock pot (on high for about 5 hours) to make for more tender meat. I thought it was a bit oily, so I would suggest maybe using 1/2 teaspoon oil.

Mexican Casserole

Great, easy recipe! I rinsed the beans (I think you should always rinse black beans), but I used the liquid from the corn in lieu of water per suggestions. I cooked chicken with diced onion, and next time I will saute some red and green peppers to add to the chicken and onions.

Hearty Lasagna

This made one huge lasagna. I added fresh garlic and oregano to the sauce, used fat free ricotta, and sprinkled extra mozzarella on top for the last few mins. of baking, and it was great.
