Chocolate Chocolate Chip Cake Cookies

Wow. These were super rich, super chocolaty. Crispy on the outside, chewy on the inside. Like perfect brownies in cookie form.

As expected, super good. Used all butter instead of shortening. Had to keep a careful eye on the oven to not under or over bake. Came out perfect.

Spicy Sweet Potato and Coconut Soup

Love this soup! Just finished making and I may just eat the whole pot before dinner. I did make a few changes. Added carrots and celery with the onion. Also used ground cumin, ground ginger, turmeric and paprika. Also added lemon zest and lemon juice. And used chicken broth instead of veggie broth because that's what I had. It's so good.

Plum Quick Bread

Really, really good. Good flavor and texture. Love the topping. Next time I will lightly dust the plums to help keep them from falling to the bottom during baking. Alton Brown suggested this when making Blueberry muffins. Either way, the recipe is a keeper. I will try this recipe when peaches, nectarines or apricots are in season too. It really is good.

Plum Blueberry Upside Down Cake

So easy yet all were impressed. I did use more than four plums though. I think that's because I had small plums. Also, my plums were very ripe and after baking there was not much definition of each slice. So it wasn't as pretty as the picture. I also used frozen blueberries. Which were pretty much jelly when I was done. Still, it was pretty and so so so yummy. I will make again and again and again.

Spicy Plum Sauce

Maybe I did something wrong or maybe I just am not a vinegar fan, but after all that work all I taste is sweet vinegar and nothing spicy. I may try this again next year when the plums are ripe, but I will reduce the vinegar and increase the spices.

Pesto Sauce

The best pesto I have ever tasted if I do say so myself. Way better than the stuff in the jars and so easy. The whole family was impressed. I, as suggested, eyed the oil to get the consistency I wanted. Also, I used a ton of left-over roasted garlic instead of the fresh. I also used a combination of sweet basil and a spicy Thai basil. And I love that it used walnuts instead of pine nuts because they are way cheaper and just as good.

Soft Oatmeal Cookies

My search for a perfect oatmeal cookie has ended. These cookies were soft, chewy and delicious! Easy to throw together – I didn’t even chill the dough. I added cranberries, coconut and walnuts. So good, they unfortunately didn’t last very long. Next time I will have to double the recipe!

Chocolate Chocolate Chip Cookies I

In an attempt to soften the butter, we melted it. We used it anyway and just added a little more flower to compensate. The cookies actually turned out really good. Soft and chewy. We used white chocolate chip cookies.

Apple Bacon Tomato Soup

Good N Easy. Next time I will sauté the Celery with the onion and garlic so it's not quite so crunchy. Of course, bacon flavors so many things wonderfully. But, I think this would even be good without the bacon, for a lot less fat. Love the apples cooked in wine. That gives me lots of ideas!
