Cottage Cheese Pancakes

Very very good! My husband loves cottage cheese and I do not! But we both really liked these! I did add some vanilla to the batter. Served with fresh strawberries and pure maple syrup on top. So yummy. Between the two of us we finished he whole batch.

Soft Chocolate Cookies

Awesome cookies! Perfect for that must have chocolate kind of day. I mixed in dark chocolate chips, chopped pecans, and little caramel balls. They are great! But you must have milk in the house! I literally had to go to the store while the last sheet was in the oven on my husbands request. :)

Butterscotch Icebox Cookies

Very good Butterscotch cookies! Just what I was looking for. I did follow others advice and turn the temp down to 375 and the cooking time down to 10 mins and they turned out perfect!

Butterscotch Oatmeal Cookies II

I liked these cookies but the recipe didn't quiet work how I thought a cookie recipe should. Next time I will let the batter completely cool before backing. (I got giant flat cookies with the warm batter). Reduce the amount of butter to about 1/2 cup (they were very oily) and play around with adding on egg and some more flour. Despite their flat greasy texture they were very tasty. I did however add 1 tsp. Vanilla, cinnamon and allspice.

Gobble Up Granola Snacks

Fast and fantastic! My hubby who is not a fan of peanut butter loved them. I used honey instead of corn syrup and followed others suggestions and used 2/3 cup for all. I pressed dried cranberries into the top as soon as they were in the pan. They stuck very nicely. I left them in plastic bags in the cupboard and did not have any problems with them drying out. I can't wait to make them again and try some variations with mini chocolate chips or different cereals or dried cherries! Yum.

Cinnamon, Spice and Everything Nice Cookies

Marvelous Cookies! My husband loves ginger and cinnamon and he loved these cookies! I did of course add a little bit to the recipe. I used 1 cup white 1 cup brown sugar. (B sugar helps keep baked goods soft after they are cooked plus more molasses taste is always good) I also used bread flour instead of AP (all purpose). The high protein content in the bread flour makes them chewier. I also almost added more spices some Ground Cloves, Cinnamon and extra ginger. :) Also watch the bake time mine barely took 8 mins. Enjoy!

Microwave Apple Crisp

So surprising! My husband was even surprised. I made it in a 8 inch pie dish and only needed two large apples and mixed them with some cinnamon and agava syrup before topping. It made a yummy sauce with the juice from the apples while it cooked! The only thing I would change would be the amount of butter in the topping, a little bit on the heavy side for my liking. But is was delish! If you don't tell no one will ever know it was made from a microwave.
