Avocado Quinoa Salad

This is a delicious, simple dish. I made it as is, just skipped celery. My one year old twins even loved it. I will definitely make this simple recipe again.

Easy Chicken Enchiladas

I use half the amount of cream cheese and put enchilada sauce in the bottom and on top (roll tortillas up in the sauce and they get a nice, thin coating of it)

This is delicious. The only change I made was used only one can of black beans instead of 2 (I am a huge fan of black beans, but 1 can was plenty). My 6 year declared that this recipe was "to die for"!
