Triple Chocolate Cream Filled Cupcakes

I love the Triple Chocolate Fudge cake mix and canned frosting by the same name. I probably use the canned frosting most of all. I especially like the frosting on Ghiradelli Triple Chocolate Brownies. What a unique way to change up the ingredients! The products are very hard to find in my area, but I have found the canned frosting at Meijer, unfortunately not all of them.

Cranberry and Cilantro Quinoa Salad

Very delicious! I use this as a lunch salad with chicken breast or albacore tuna. I omitted the cilantro and used chopped black walnuts & sliced scallions instead of the sliced almonds & red onion. I also added some extra Madras hot curry powder to my taste and steamed the quinoa. Otherwise, I didn't change a thing. I really like that it is low in sodium and fat. Thanks for sharing.

Gooey Butter Cookies

I chill the dough for 2 hours before shaping and baking. I used anise flavoring instead of the vanilla to make an Italian version.

Best Ever Banana Bread

This bread just is NOT the "best ever" banana bread. I have been baking for over 38 years now and have never had my banana bread doughy and undone in the center as this recipe produced. I had been baking breads before this one (my recipes) and they all turned out well except this one, so it was not the oven. I even tried it twice adding more time with the same effect-putting a foil tent over top to keep from getting too dark.

Chicken Enchilada Dip

Substituting 24 oz. of canned boneless, skinless chicken breast drained and adding taco seasoning to taste really makes this a fast, great dip! This is called Chicken Chimichanga Dip from my region of the country.

Broccoli Salad II

I have been making this salad for years. Out of all of the other submissions, this salad is closest to the original (except for 1/2 cup of diced red onion). The dressing ingredients and measurements are from the original recipe. I have added cauliflower mixed with the broccoli, dried cranberries or cherries instead of the raisins, sunflower seeds and walnuts or pecans. Wherever I take this salad, people ask for the recipe.
