Zucchini for Lunch

I really liked this for a quick light healthy lunch! I did make a couple changes and additions though. I used olive oilinstead of vegetable oil, a green pepper instead of red, and 3 green onions instead of a regular onion. I also only used the whites of the eggs. I added a serrano pepper, 5 halved cherry tomatoes, and 2 tablespoons of low fat cottage cheese. The sauce was a bit too much for me, so next time i will minus the cherry tomatoes and use a can of diced or stewed tomatoes as the sauce. I also topped it with a bit of shredded Dubliner cheese! This recipe was a great basis to start from!

Thai Grilled Beef Salad

I thought this salad was AWESOME! Very comparable to what you would get at a Thai restaurant, only 1/4 of the price! It fed my boyfriend and i for under 10$!!! I only used 1/2 the fish oil, and crushed red chili pepper and 1/2 a lemon in place of the chili oil. I also couldnt find the Kecap Manis, so i just omitted it. I can see how it may sweeten it up a bit tho. The store i went to didnt have Thai chili peppers so i used and Anehiem pepper instead. All in all, we were very satisfied with this recipe!

Shrimp Scampi and Tomato Broil

If you like plain.....This recipe is for you. My boyfriend liked it, but it just tasted like plain shrimp to me.....i love shrimp, but i would have rather saved myself the time, and bought cooked shrimp and had shrimp cocktail!

Strawberry and Feta Salad

Im going with the crowd on this one.....AWESOME! My boyfriend said this was the one salad he has eaten that didnt even really need the dressing. The dressing, however, was awesome! I do agree with the others tho..watch out for the oil!

White Cheese Chicken Lasagna

This was a very good recipe, although I did tweek it alot. I made only 2 servings, but i used 3 layers of noodles, a cottage cheese and ricotta cheese mixture where it calls for ricotta only. I used little spinach, just because i am not a huge fan of it cooked in foods. and on top of each layer, I put a lil pasta sauce. I feel without the sauce addition, it may have been to dry and thick. All in all, a good recipe tho!
