Carrot Cupcakes with White Chocolate Cream Cheese Icing

Great recipe. I made cupcakes just like the picture and had my husband take them to work where he got rave reviews. I used the frosting recipe from Carrot Cake III because I didn't have any white chocolate on hand. It made more than 12 cupcakes.

This was great! I added in asparagus too and it was really good. It's a big recipe so I had to cut it in half for a 9x13 pan.

Mushroom Orzo

This had 5 star taste but I'm only giving 4 stars because I had to make changes. I went with the other reviewers suggestions. I used only 2 T of butter, a medium sized regular onion that I browned with 2 cloves of fresh minced garlic. I used a full cup of wild mushrooms and no garlic powder. I only put in about 1/4 c of fresh grated parmesan. It was fabulous and a keeper.

Grain and Nut Whole Wheat Pancakes

These are our new favorite pancake recipe. I don't think I can go back to just using plain white flour. The flavor that the buttermilk and oatmeal adds is delicious. You wouldn't know that these were whole wheat pancakes. I added a healthy dose of cinnamon and a teaspoon of vanilla. I put blueberries in half the batch and they were delicious.

Chicken Pot Pies with Puff Pastry

I added some chicken bouillon to the gravy as well as some chicken seasoning. I also added in some salt as I used low-sodium chicken broth and it was fabulous. My husband loved it. The puff pastry cooked up beautifully and the recipe was sooo easy. You can put in any type of vegatable you want. This one is a keeper.
