Zippy Beef Bake

I would give this 4 or even 5 stars, but husband wasn't thrilled about the zucchini. I used cooked brown basmati rice, 7% fat beef and reduced fat sour cream and cheddar, no additional oil. I really liked it, and will make again, just need to find a substitute for the zucchini.

Margarita Grilled Chicken

After reading the other reviews, I decided some changes were in order to suit our tastes. I used Trader Joe's margarita mix because it's not quite as sugary. I also added maybe 1/4 to 1/2 cup of tequila, some ground cumin, dried oregano, garlic powder and S&P to taste. Husband grilled it, but he wasn't completely won over; I liked it pretty well, it wasn't too sweet or limey, and the tequila added a subtle touch. My only minor complaint was that it needed more salt, but I like a pretty salty Margarita!

Carne Guisada II

I think I really messed up on this one. Made it in the slow cooker, but instead of Serrano chiles, I used a whole can of chipotles in adobo sauce. The meat. was super-tender, but it was so spicy we had to drown it in sour cream and smother it with cheese. The flavor was good, once you got around the spiciness of chipotle overkill. Not Bao's fault; my fault. Served with the Sweet Corn Tomalito on this site. Would make again, with major retooling.

Grilled Marinated Swordfish

Really good! I didn't measure anything and broiled instead of grilled, and it still came out great. I was a bit skepical about the poultry seasoning, but I couldn't tell that's what the "secret ingredient" was. Don't skip it, it really makes the dish!

Almond Sole Fillets

This was yum-my! I'm on Weight Watchers, so I used Land o' Lakes light butter with canola oil spread, about 2 tablespoons, and I baked the fish for 20 minutes at 375, instead of using the microwave. I'm not a huge fish fan, but I'll be making this again! Thanks for the recipe!

New Year Spinach Fettuccine with Scallops

I'm going to give this 4 stars because I'd like to try it again. I used scallops that had been in my freezer, and they released so much liquid that the sauce was really runny. I also used fresh mushrooms and Healthy Request mushroom soup. I started by sauteing the mushrooms in about 2 teaspoons of oil until they released their liquid and started to brown, then the garlic, then the spinach and scallops and finally the soup and wine. It looked kind of nasty, what with the extra liquid, but it was tasty enough to make me want to try again. Served over rice instead of pasta. I don't think husband liked it much, and he complained about the number of dishes he had to do. ;-)

Sour Cream Mushroom Dip

Well, I liked this quite a bit. I didn't use any onion, and I used fresh garlic instead of garlic salt, and fresh parsley rather than dried. Cooked mushrooms until they had lost their juices and were starting to brown, then added about 3 cups of spinach along with the other ingredients. Used reduced-fat cheddar cheese and light sour cream. Processed the mixture briefly to get a more uniform chop. Held dip in the refrigerator about 4 hours before baking...husband waited to tell me AFTER I'd put it together that he's not all that fond of mushrooms (8 years married, and he can still surprise me!), but I liked it, and my company liked it. I'd make it again, but I think I'd use a different cheese...Gruyere or Swiss would probably be excellent. Thanks for a keeper!

Rhubarb Strawberry Crunch

First rate! Did make some suggested changes. Baked bottom crust for 15 minutes and let cool while preparing the fruit. I combined the fruit and cornstarch mixture in a bowl before pouring over bottom crust. I also reduced the white sugar to 3/4 and water to 3/4 cup. Added 1 tablespoon Grand Marnier to fruit mixture, but you really couldn't taste it. Baked an additional 45 minutes. Would definitely make again, but I think I'd reduce the water even more...it was pretty juicy. Tasted great, though, and our company loved it.

Quinoa with Chicken, Asparagus and Red Peppers

Husband and I both really enjoyed this. I modified recipe for 2 servings, used an 8-ounce b/s chicken breast, the same amount of asparagus and substituted jarred roasted red pepper for the bell pepper. Fast, super-easy and perfect for my Weight Watchers plan...only 9 points! And anytime husband says 'I like it,' it's a keeper! Thanks Kris!

Pineapple Cranberry Chicken

I really liked this, but my husband thought it was way too sweet; thus the 4 stars. I only used about 1-1/2 pounds of chicken and I cut it into chunks. Browned it in olive oil and seasoned with salt and pepper. Only had jellied cranberry sauce, so I used that with the pineapple, mixing it up well. After browning the chicken, I seasoned it with Penzey's cassia cinnamon (more than a 1/2 tsp.) and a pinch of nutmeg. Still in the skillet, I poured the pineapple mixture over, covered and baked 15 minutes. Uncovered and baked another 15 minutes. I stirred in some passionfruit vinegar I got in a specialty store just before serving. Served over steamed white rice with roasted asparagus. I'd make it again, if only....

Curried Chicken and Brown Rice Casserole

I am so happy I found this recipe! I just typed in "cooked brown rice" and "chicken" in the ingredient search, and this was kind of what I was hoping I'd find! Since I'm on Weight Watchers, I'm being very careful about what I eat, and make healthy changes wherever I can. For this one, I used fat-free, sodium-free chicken broth instead of chicken bouillon, but everything else was pretty much the same. Didn't have stewed tomatoes, so just used canned chopped tomatoes in juice, currants instead of raisins, Penzey's FABULOUS Maharajah curry and skipped the bay leaf. Since the rice was already cooked, I just combined everything in a skillet and simmered until the chicken was done (about 10 minutes), then added the rice and popped it in the oven for another 10 minutes. DELICIOUS, and even husband enjoyed it. Thank you, Isybel, for a really great recipe!

Dill-Tarragon Salmon with Capers

This was great, but I made quite a few changes. I only had 6 ounces of Greek-style plain yogurt, so I used that. Didn't use any cheese at all. Was pretty free with herbs. Instead of mayonnaise, I used Dijon mustard, especially since some reviews mentioned the sauce being kind of boring. Like another reviewer, I used quite a bit of lemon juice, both in the sauce and on the salmon. Seasoned salmon with salt and pepper in addition to lemon juice, and put in the refrigerator while sauce stood. Let sauce stand at room temperature for about 20 minutes, then added about 1 tablespoon of drained capers. Baked about 20 minutes. Salmon was a little underdone, but still very good. Sauce was great. Cooked this for friends, and they enjoyed it very much. Will definitely make again.

Black Bean, Sausage, and Sweet Potato Soup

This would have been SO GOOD if I hadn't forgotten to lower the heat! :-( !! I used Italian turkey sausage and needed additional water and chicken broth (even before I semi-burned it). I hope that the 8 servings was referring to a first-course soup; we had it as a meal and it served 4 very well. We topped it up with low-fat sour cream and served with 9-grain bread. I'll DEFINITELY make this again, but this time I WON'T BURN IT!

Ginger Glazed Mahi Mahi

Pretty good! We're trying to cut fat & calories, so I omitted the oil and baked the fish at 400 for about 30 minutes (it was frozen). I didn't reduce the glaze on the stovetop, but it did get fairly thick in the oven. I think I don't care much for the taste of mahi mahi, but I'm sure this would be good with most any white fish.

Raspberry-Glazed Rosemary Chicken

Our New Year's Resolution was to start eating healthier (like almost everyone else!), and we liked this. I cut the chicken breasts halves in half because they're so large anymore. Substituted dried basil for the rosemary (I don't like dried rosemary) and some leftover cranberry sauce for the raspberry preserves. Would definitely make again, but I thought it needed S&P.

Lemon-Orange Orange Roughy

I'm not a big fish fan, but I liked this. I was surprised that my fish-loving husband thought it was too tart. I didn't have any fresh lemons, so used bottled and seasoned with a little S&P. Would make again, but maybe cut down on the lemon juice & DEFINITELY use fresh.

Winter Squash Rolls

Fabulous! Two cheats - I bought a bag of already peeled & cubed butternut squash at Trader Joe's, and I used unsalted butter instead of shortening. I haven't made a yeast dough in years, and I'd really forgotten how satisfying and FUN it is. I used my KA, so the dough worked up like a dream, and didn't require very much additional flour during the kneading (I love to knead by hand). I should have read more reviews, though. The rolls were ginormous (I made 12), and some of the dough went to the compost bin. Served them for Christmas dinner, and got rave reviews. With butter and tayberry jam...delicious! With leftover turkey, cream cheese and cranberry sauce later for supper...delicious! Thank you, Tracey for a real keeper!

Hungarian Pork Chops

Delicious! I was only cooking for 2, but I didn't decrease the sauce ingredients. Should have, though, or should have served with rice or pasta. I forgot the bay leaf, but that didn't seem to make any difference. Will definitely go into my rotation. Thanks!

Harvard Beets

This was great. I needed a simple side dish for salmon, and found a can of beets in the cupboard. A quick search on allrecipes, and voila! Even picky husband enjoyed them. I did reduce the sugar by just a tad. Can't wait to try this recipe with fresh beets, which are a favorite. Thanks!
