I have made this recipe many times. Everyone loves it, especially kids. The recipe is delicious exactly as it appears here. It is also delicious modified to make it healthier. I've replaced some of all of the flour with wheat flour; some all of the vegetable oil with apple sauce (the more you use the more the flavor becomes pumpkin-apple); and and I've replaced some or all of the sugar with agave and/or honey. The recipe is always good. My only complaint is that the top gets sticky the second day, whether you store it on the counter or in the refrigerator. The only way I've come up with that helps is to replace some of the sugar with brown sugar, which is also delicious. (Or, just toast it and spread cream cheese on it.) Oh, and, don't hesitate to thrown in some extra pumpkin, and just plan to cook it a little longer. And, it freezes well (but the top is a little sticky). Delicious! A family favorite.
