Quick Chicken Piccata
My First Review - It was that good and that easy. I didn't have chicken breasts, used strips. Didn't have flour, used breadcrumbs. Didn't have white wine, used champagne. Didn't have butter, used margarine, decreased the water in the recipe and thickened with the tiniest bit of cornstarch at the end. Had thin spagetti that I served it with and it was so so so good! And way easy too. Can't wait to make it with the proper ingredients! Thanks Chef John!!

Pumpkin Pancakes with Nutmeg Whipped Cream
didn't make the whipped cream, but made the pancakes with pumpkin pie spice instead of all the separate spices, and did end up adding about 1/4 cup of additional milk to thin it out a little, but it still had a good flavor. I did the "spread it out with your ladle" when I poured onto the skillet/griddle and they came out thin enough and tasted great. Daughter requested them a second time the day after Thanksgiving! I like these!

Pecan Pie V
very good, very easy recipe. I didn't change anything except I used whole pecan halves, and used about a handful more than the 1cup called for in the recipe. Did everything else "by the book" and it is better than the Karo syrup pies... better texture and more caramel type flavor. I'll use it in the future!
