Chef John's Pumpkin Pie

Made this for the first time around Thanksgiving and making it again for Christmas. I made a few changes-- I had a real pumpkin at Thanksgiving, which I pureed in my Vitamix. I substituted that for a can. I also did not have the Chinese 5-spice so I added a tiny bit more ginger, nutmeg, and cinnamon. I have to say the magic might be in the real pumpkin (which was not a special baking pumpkin, just the one I'd gotten from the grocery store before Halloween), but whatever it was, best pie ever. Now reusing the same pumpkin puree, which I had put in the freezer, to make it again. I also appreciated the tips about mixing in the accompanying video as I'm a novice home baker who typically just throws it all together, but I love to learn about the real chemistry of baking. Thank you for this recipe, Chef John!

Four Egg Yellow Cake

In spite of the fact that this tastes okay, I was disappointed with the result. It is rated very high and usually the reviews from before help me to alleviate any issues for recipes rated so highly, but that was not quite the case for this. My husband really liked it so perhaps if I take away the title "yellow" and just call it "cake" it's fairly good. I used butter instead of shortening and 5 eggs instead of 4 to help it be less dense as other reviewers had suggested. If you get it out of your head that you're making a typical "yellow cake" it actually does taste fairly good. I also made a chocolate frosting on top with powdered sugar, brown sugar, butter, and cocoa powder, which helped.

Fluffy Pancakes

Loved this recipe. Made a few small changes. Doubled the recipe & used 1 1/4 cup white flour & 3/4 cup wheat flour. Added a dash of vanilla to the batter & used olive oil in the pan. Heated the oven to 250 degrees to keep the finished pancakes warm while the others were cooking. Served with fresh fruit, plain greek yogurt, fruit jam, and real maple syrup (with all combinations of those toppings). We've tried a lot of pancake recipes and this is our current favorite for sure.

Chicken Tacos

This was lovely & people raved. I used 1 tsp soy sauce instead of 1.5 tsp worcestershire sauce. I cut it down to 1 Tbsp olive oil. I also used more ingredients in the taco seasoning portion, including chili powder, paprika, red pepper flakes. I forgot the bay leaf and am curious what that would have added. The dinner was an absolute hit but I would have liked even more of a kick in the seasoning and will play with that in the future.
