Scotch Bonnet Hot Sauce

I loved the fragrance of the peppers, onions and garlic while cooking them . . . the end result was even more amazing. Step aside Frank's, or as the commercial goes I put this ... on everything!

Baba Ghanoush

I have prepared this recipes many times with a twist . . . to start, and after seasoning it with olive oil, salt and pepper, and garlic powder, I grill/fry the eggplant. NOTE: When I want to add a bit of a kick, I also season the eggplant with dried chili pepper flakes. I grill the eggplant until it starts to get a nice brown look to it and I can start to separate it with a fork. I also leave the skin on which adds a great flavor and texture. This has become a family favorite!

Boilermaker Tailgate Chili

What I love most about this recipe is that you can substitute ingredients and still come out with a great taste. For example, I have used cans of medley beans of 6 different varieties with black beans and corn. I have used chicken in place of the beef and when I unexpectedly ran out of chili powder I used taco seasoning. End result . . . a family favorite!

Grilled Tuna Steaks with Grape and Stuffed Olive Salsa

I did not have capers or parsley, so I used stuffed Manzanilla olives and thinly sliced celery that was then chopped. Fantastic flavor as the olives offered a similar flavor to the capers, while the celery was the ideal fresh counterpart to the parsley.

Aztec Salsa

This sounded like a great recipe but I was missing a number of the ingredients. Rather than black beans I used lentils, the only onion I had were small Spanish onions and instead of corn I used celery. I also subbed white wine vinegar for the red, and taco/guacamole seasoning in place of the Italian . . . for a sweet touch I used yellow cherry tomatoes to compliment the 3 diced tomatoes. End result - the lentils actually gave the salsa a refried beans flavoring . . . and it was great.

Sloppy Joes II

Great recipe . . . with a few minor tweaks. To start I tripled the quantities to ensure that there would be leftovers. Instead of using all ketchup I used 50% ketchup and 1 5.5 oz can of tomatoe paste. I then added 1 1/2 tablespoons of white wine vinegar and 1 1/2 tablespoons of Manuka honey. The end result was our kids asking for seconds and thirds . . . not has much leftover as I had planneed ;)

Southern Potato Salad

To start, our oldest son does not like potatoes in any form . . . that is until now. He loved this salad. I made a few tweaks per some of the other comments such as adding 1 tablespoon of apple cider vinegar to the potatoes prior to mixing with the other ingredients. I also added 1 tablespoon of sugar and not having celery, used a 1/2 teaspoon of celery salt. This is a sure winner, and one that is now a family favorite!

Hummus III

Bang on in terms of consistency but a little bland in taste so I added 8 cloves of freshly roasted garlic and a 1/4 cup more of fresh lemon juice . . . tasted great!

Incredible recipe with one change . . . use Ritz crackers instead of bread crumbs. I would also double dip re once in flour and then once in batter, then repeat.

Best Marinara Sauce Yet

Great Recipe!!!! On the first go around I substituted White Grape Juice in place of wine and it was a hit. This time I am using white wine vinegar instead to add a little edge . . . will let you know how it goes. Thank you for sharing this recipe. Added note: I was out of white grape juice and fresh oregano. Substituted equal part chicken stock and 1 teaspoon of dried oregano versus the 1 tablespoon of fresh. This recipe is full proof!!!! Excellent result again.
