Colcannon Irish Potatoes

Wow, so simple, quick, and delicious!! I made exactly as directed, except I added a little shredded cheddar at the end. Cheddar makes EVERYTHING better, after all. ;) I do think, however, it could use a little more salt, but that's an easy fix.

Red Beans and Rice Burrito

This was FANTASTIC and really easy! Like the picture, only inside the tortilla: top it with some plain nonfat greek yogurt (instead of sour cream), some shredded sharp cheddar, and some chopped green onions to up the wow factor. Delicious!

Easy French Dip Sandwiches

I am but a poor student, so I used the Oscar Meyer prepackaged roast beef, but I think if I'd used some really good deli stuff, and remembered to put horseradish on my sandwich (yummm!!), this would have been even better. As I made it, it was quite delicious especially considering how inexpensive and easy this was!

Scrambled Tofu

Quite delicious and easy! I opted to drain the tomatoes, and I'm glad I did because the tofu still had some liquid, or I would have had breakfast soup instead of a scramble.

I feel really guilty cooking with bacon drippings, so it kind of tainted the final product for me. I think I will make this again, though, and lose the bacon in favor of lots of garlic!

Don't think you can subvert the directions and make this in a crockpot, as it never thickens! Quite tasty, though, after I transferred it to a pot.

Extremely challenging, but very adorable idea. I tried to hollow out near the stem instead, as someone suggested, but it was still really difficult, and getting the fruit leather to stay was next to impossible.

Totally, totally adorable! I did modify the recipe a little, but not a lot. I added some horseradish because I like my deviled eggs with a little kick. These definitely needed some "bloodshot" though, so I did the toothpick dipped in red food coloring.
