Waffles I

Reviewed: Aug. 28, 2011
A fantastic waffle recipe. Light, crispy, flavorful, and easy to make. I got 9 waffles using 2/3 C batter. I used olive oil instead of vegetable oil, replaced half the flour with whole wheat, and used 2 tsp vanilla. Next time will use all whole wheat!

Yummy, light and fluffy. A great roll. Definitely makes more like 30 rolls.

Lemon Muffins

Reviewed: Aug. 13, 2010
On their own these muffins are pretty bland. I usually add a lemon glaze and then they are delicious, but without it they aren't anything special.

The Best Rolled Sugar Cookies

Reviewed: Aug. 13, 2010
These were a mess. They stuck to the counter no matter how much flour I used, stuck to the pan, got hard when they cooled, and had a weird texture.

Fluffy Pancakes

Reviewed: Aug. 13, 2010
Make these at least once a week. Have replaced the flour with whole wheat sometimes and it is still light and fluffy. Plan to try with banana soon. Yum!

Pepperoni Stromboli

Reviewed: Feb. 22, 2009
I used refrigerated pizza dough, but I had trouble trying to braid it and ended up just giving up and pinching it all together. There was too much bread and not enough filling. I would use more cheese next time. Though I'm not sure there will be a next time, it wasn't worth the effort.

Three Cheese Manicotti II

Reviewed: Feb. 22, 2009
This was so amazing that we ended up making it for my department at work the next week. I did not cook the noodles like someone else suggested and added 1 C water to the sauce instead and cooked for an hour. It turned out perfectly. I do think that 2 jars of sauce is a lot, and would recommend 1 or 1.5 because it bubbled and splattered all over the inside of my oven.
