Grandma's Secret Pie Crust

I doubled the recipe, used 1c chilled shortening, 1 1/2 c chilled butter. Also used apple cider vinegar because I don't have white. I needed an extra 4 T ice water, but my climate is very dry right now. Chilled the dough in the refrigerator before rolling it out, let it rest in my tins in the refrigerator after draping it in them. I made 2, double crust pies and had enough leftover for a single crust pie as well. Cut into strips for a lattice on one of the pies, the dough handled very well, didn't tear or break apart. The crust was flaky, flavorful and tender, everything I hoped for! The butter let it brown nicely, I did need to foil the rims halfway through.

Cajun Spice Mix

Very good and easy. I left out the onion powder because I'm out, and substituted ground chipotle pepper for cayenne. Added an extra "smokey" taste I was looking for. I'll make it again, and add the onion powder next time!

To Die For Blueberry Muffins

Easy to throw together, very soft and delicious. Mine took longer to bake, but I used frozen blueberries because that's all I had on hand. The blueberries were small, so I dropped them to 3/4c, threw in a tsp of lemon zest. I left out the cinnamon in the topping, added a bit of lemon zest to that as well. There was way more topping than I could use and I was heaping it on! Tip on making this recipe with frozen blueberries, sprinkle half the berries over the batter, fold it over and repeat with the other half the berries. This reduces the blue muffin effect, while still ensuring an even distribution throughout the batter.

Chewy Oatmeal Cookies

These were awesome, only smash lightly, err on the side of under baked and let rest on the pan for a min before removing to rack. I split it in fourths, added cinnamon and raisins, cinnamon, raisins and walnuts, chocolate chips, and chocolate chips & walnuts for variety. All turned out great! My favorite was the cinnamon raisin walnut. Alltogether great, even without salt, which I questioned initially!

Homemade Pudding

LOVED this recipe! and I grew up on cooked Jello pudding in the 80's... This version is easy, silky, and less sweet, so much better! I made chocolate with 1/4c. of cocoa, I'm a dark or don't bother chocolate fanatic. I will definitely make again!
