Easy Spiced Brown Rice With Corn

This was yummy and a fantastic side dish, but I made a few changes. I used low sodium chicken stock instead of water, used dried cumin instead of cumin seed (and probably used three times the amount), and used fresh corn instead of frozen. I added the fresh corn almost at the end of the cooking process, just to heat it though. Thanks for the recipe!

Chicken Lo Mein

This was yummy, but I made a few changes. The grocery store didn't have shiitakes when I went so I used portobellos instead. Also, I added some sliced red peppers that I needed to use up. I used tagliatelle noodles instead of linguine. I would have given this five stars, but since I made these substituitions, I'm not sure how it would be in its original state. All the same, looking forward to making it again soon...I couldn't stop eating it! Thanks!

Seared Scallops with Tropical Salsa

Living on an island, with access to some fresh, tasty seafood, I am always looking for new ways to prepare fish and shellfish. This tropical salsa recipe was AMAZING as is. I especially loved all the cilantro. It was a big hit with DH as well, and I'll be making this again soon. Thanks for the recipe!

Addictive Sweet Potato Burritos

These were fantastic! The only changes I made were substituting honey dijon mustard for the prepared mustard, and cajun spice blend for the cayenne pepper. Also, I added only one cup of water at the end instead of two. I felt that adding the other cup would make the mixture too runny. I used a cheddar blend of cheeses, instead of cheddar only. I can't wait to make these again! These would please anyone, even the pickiest vegetarian!

Cream Cheese Brownies III

These were yummy! I used semi-sweet chocolate and low-fat cream cheese. They were very moist and kept well. They were all gone in a few days!

Special Buttercream Frosting

This frosting is fabulous! I made it exactly as is, and it got rave reviews! I've used it on both confetti and butter pecan cakes, and it complemented both very well. I think this could be used on almost any cake or cupcake. It piped well and was easy to color.

Spicy Indian Chicken and Mango Curry

This recipe was very mild when cooked as is. I made a few changes to this so that it was more to my and DH's liking. I used spicy Vindaloo curry paste, and used at least twice as much as was recommended in the recipe. I also added some extra spices at the end including: tumeric, garam masala, ground ginger, curry powder, cumin, and black mustard seed. This really spiced the recipe up. I would also like to say that it is very important to use optimally ripe mangoes. If they are underripe, they are not nearly sweet enough and it makes a difference. I think if I made this again, I would leave the cucumbers out, or I would cook them first, before adding them to the pan.

Pear and Gorgonzola Cheese Pizza

I cannot say enough good things about this recipe. DEFINITELY one of the best recipes from AR that I've made. I did make a few changes. First of all, as previously mentioned, I baked the pizza crust for 6 minutes before adding the toppings. I also lowered the baking temperature to 400 degrees. Once it had baked for 6 minutes, I removed it from the oven and rubbed some EVOO and 2 cloves of garlic onto the crust. Then I substituted dried chives for fresh, and used pecans instead of walnuts. Once the pizza was removed from the oven, I drizzled the slices lightly with a balsamic reduction. Everyone loved the presentation of this pizza, and thought it was very sophisticated and yummy! Thanks for the recipe!
