Paella I

This recipe is very good if you follow the instructions exactly. I don't like white rice, so I used basmati (Brown) rice. Since brown rice has a longer cook time, I began cooking the rice first (in 3.5 cups chicken broth, 0.5 cup wine and saffron). I added a little extra saffron since brown rice has a stronger flavor). Let the rice cook for 25 minutes, and then add the sauteed vegetables and other ingredients (except the seafood), and cook for another 20-30 minutes until rice is done.

Slow Cooker Chai

This recipe is very good. I added 1/2 tsp vanilla extract, 1/4 tsp nutmeg, a dash of fennel seeds, and a dash of anise. Also, a handy conversion is: one cinnamon stick equals 1/2 tsp ground cinnamon. It makes the house smell great!

Vicki's Hush Puppies

I used corn oil to fry these. At first my heat was set to 7 (out of 10) and the oil started smoking, and the dough blackened on the outside and was uncooked on the inside. I would suggest preheating the oil for 10 minutes on medium low setting (4 out of 10) on your stove-top, and then cooking until golden brown. I added garlic and jalepenos. I didn't have self-rising cornmeal or flower, so I added 1 tsp baking powder. They came out better than any restaurant hush puppies I have had in the South!

Blackened Salmon Fillets

This recipe is AMAZING. However, it filled my house with smoke! Use Peanut Oil or Corn Oil instead of butter to avoid setting off your smoke alarm. I have cooked salmon numerous ways, including the Fircracker Salmon recipe from the top 20 on this site and this recipe is the best way to cook salmon I have ever tried.

Cream of Wheat Griddlecakes

Light, fluffy and delicious pancakes. Used whole wheat flour of course, added a half cup of blueberries and used brown sugar instead of white. Seemed very nutritious.

Tuna Noodle Casserole from Scratch

I fried the onions/mushrooms/celery in olive oil instead of butter, and tripled the garlic. Used whole wheat pasta spirals instead of egg noodles and whole wheat flower. Also I used soy milk instead of milk. Even if you don't like those substitutions (though they tasted awesome) I would definitely recommend adding more spices than as written. I added oregano and spicey paprika and more black pepper than the recipe called for. I also used more cheese than it called for and used the canned, crunchy fried onions instead of bread crumbs.
