BBQ Chicken Calzones

Wasn't crazy about them at first, but I think it was my fault: didn't put in enough cilantro or BBQ sauce or cheese or something. I added a little more and they were pretty darn tasty. These heated up really well the next day.

Oven Fresh Seasoned Potato Wedges

These are delightful, I ended up adding a little bit more salt while they were cooking, but overall we really liked them. Plus, the house smelled like a garlicky-cheesey angel ;)

Easy Tortilla Soup

Pretty good as is, but I added some spices (ground cumin and chili powder) as well as corn and beans in the end to spice it up a little bit. Then it was a little bitter, so I added some brown sugar, and it was delightful!

Mini Pumpkin Butterscotch Muffins

Delightful! We made them into normal sized muffins, because we only have that size of pan, so if that's the case, cook them for ~10 minutes longer.

Mom's Zucchini Bread

I used about a cup more zucchini than was actually called for, and I am so glad that I did (we had a ton to get rid of, and it didn't affect the flavor/texture adversely whatsoever!) I did 1/2 and 1/2 white flour and wheat flour, and a little less oil than was called for. This was delightful. Will make again and again!

Slow Cooker Chicken and Dumplings

Very Tasty! We put potatoes and carrots in with the chicken at the beginning, then stirred in the soup. The dumplings took a little longer in the crock pot than the recipe called for. It was delicious!

Quick Sausage and Bell Pepper Calzones

These were pretty good. We used refrigerated thin crust pizza dough. I took a little longer than I was supposed to with other stuff, so I did this strombolli style which was a time saver. I think next time I would use normal or thick crust refrigerated dough.

Chicken Enchiladas V

Very tasty. I also added some salsa to the sauce, and added black beans to the individual enchiladas cause I didn't make enough chicken... But all was well. Will definitely make again!

Slow Cooker Chicken Cordon Bleu

Ok, we really loved this. It was delightful with mashed potatoes. So I set out two pieces of ham, overlapping them slightly, and then put a strip of string cheese down the middle. I laid the tenderloin in the middle of this, wrapped it up, and secured with a toothpick. Placed the 'wraps' in the crockpot and poured the gravy stuff on top. I also added about a teaspoon of garlic salt to the soup/milk for flavor. Then let her rip. About an hour before we ate, I sprinkled more swiss cheese on top of everything, layered that with the stove top, and then topped that with more cheese (what can I say, we really like cheese). (For the stuffing: i only have the herb kind, which I don't like as well, so I put in about a teaspoon of boiullon granules, and some more garlic salt, then added the butter) Like I said, we really loved this. Definitely a keeper.

Buttermilk Oatmeal Muffins

These were delightful. I doubled the recipe because I wanted more than 8 muffins, and then I ended up with 24 muffins. So you really get about 12 muffins per batch. But, I was so stinkin' glad that I doubled the recipe because they were delicious. Per other reviewers comments, I added a tsp of vanilla (1/2 tsp per batch). These were delightful!
