Mini Pumpkin Butterscotch Muffins

Delightful! We made them into normal sized muffins, because we only have that size of pan, so if that's the case, cook them for ~10 minutes longer.

Oven Fresh Seasoned Potato Wedges

These are delightful, I ended up adding a little bit more salt while they were cooking, but overall we really liked them. Plus, the house smelled like a garlicky-cheesey angel ;)

BBQ Chicken Calzones

Wasn't crazy about them at first, but I think it was my fault: didn't put in enough cilantro or BBQ sauce or cheese or something. I added a little more and they were pretty darn tasty. These heated up really well the next day.

Summer Zucchini Casserole

We really enjoyed this. I sauteed all the veggies together, cooked up a few tenderloins and added them, then mixed all of that in with the creamy mixture. I also added a little more stuffing than was called for (I love stuffing, what can I say :) Now I like Zucchini, our garden went a little crazy and so we have had A LOT of zucchini, and we have had a lot of different zucchini-concoctions. So, I liked that zucchini wasn't a hugely dominant part of this recipe, there was a lot more to it. Will make again, maybe even tomorrow because we have a lot more zucchini to get rid of.

Mom's Zucchini Bread

I used about a cup more zucchini than was actually called for, and I am so glad that I did (we had a ton to get rid of, and it didn't affect the flavor/texture adversely whatsoever!) I did 1/2 and 1/2 white flour and wheat flour, and a little less oil than was called for. This was delightful. Will make again and again!

Chicken Enchiladas V

Very tasty. I also added some salsa to the sauce, and added black beans to the individual enchiladas cause I didn't make enough chicken... But all was well. Will definitely make again!

Buttermilk Oatmeal Muffins

These were delightful. I doubled the recipe because I wanted more than 8 muffins, and then I ended up with 24 muffins. So you really get about 12 muffins per batch. But, I was so stinkin' glad that I doubled the recipe because they were delicious. Per other reviewers comments, I added a tsp of vanilla (1/2 tsp per batch). These were delightful!

Best Ever Banana Bread

I've made this twice now. The first time was a bit of a disaster. I doubled it (lot's of old bananas) and put the batter in two 9x5 pans and it boiled all over the place in the oven. THe second time I made it, I did a single batch in two 9x5 pans. And it was delightful. 5 stars because this is one of the best banana bread ever! 2 stars for me and my stupidity...
