Fluffy Pancakes

Reviewed: Sep. 22, 2010
I think these are the only pancakes that I have ever eaten that didn't need syrup. They are great plain even. And they melt in your mouth. In fact, one got left out all night long, I came back the next morning, and it was still soft and fluffy. These are absolutely perfect the way that they are, no need to enhance the recipe! Amazing!!! 'nuff said!!

I didn't use wine in the recipe, but substituted it with milk as another reviewer suggested. Love, true love!

Double-Cheese Eggs Benedict

Reviewed: Oct. 3, 2010
The sauce was a little bland, but that seemed to simply be a matter of adding a little bit more salt. But overall, it was very good.

Soft Garlic Breadsticks

Reviewed: Oct. 3, 2010
Overall, these were really good, I might add a little bit more garlic, to suit my own taste, but they were really good. They freeze really well, and then you can just pull them out, microwave for 20 seconds, and you have wonderful breadsticks all over again!

Chicken Cacciatore

Reviewed: Oct. 7, 2010
The sauce itself was probably the best part- it would make very good spaghetti sauce on its own! We ate it on pasta, not rice.

Strawberry Pie II

Reviewed: Oct. 7, 2010
I followed other reviewers' suggestions and painted the crust with melted semi-sweet chocolate it definitely keeps the crust from getting mushy. Also, I lowered the amount of sugar (to 3/4 c) and water (1/2 c)in the sauce which was a good move. I ended up adding a little more water in the end, because the corn starch thickened it up a little bit too much, so in the future maybe decrease the amount of corn starch. But a wonderful recipe!

Mom's Macaroni and Cheese

Reviewed: Oct. 9, 2010
So creamy! Loved the bread-crumb topping. Per others' suggestions, we added more real cheese, about 1/2 cup more, which was great. Next time, i might try Leaving the macaroni a little undercooked so it isn't quite so 'done' when you pull it out of the oven. But, we absolutely loved this.

Chicken Alfredo Pizza

Reviewed: Oct. 9, 2010
The sauce is amazing (maybe a little more salt) and I needed a lot more milk than the recipe called for just to get it to a consistency that I could spread. But it was nice because I had extra alfredo sauce (also, I didn't have Romano, and so I used Parmesan which was amazing) The crust has an amazing flavor (although, my husband prefers a fluffier crust, so I would probably add more yeast next time) As for toppings: Grilled chicken, bacon crumbles, green onions and roma tomatoes; I would do more toppings next time. Especially tomatoes, bacon and green onions.

Brownie Pudding

Reviewed: Oct. 10, 2010
Tasted a little bit baking-powdery to my husband. I took the advice of others and used more chocolate powder in the brown sugar mixture, used 3/4 cup brown sugar and 3/4 cup water. It was very good with vanilla ice cream.

Donut Muffins

Reviewed: Oct. 11, 2010
These were very tasty little buggers. They work fine in a normal sized muffin tin- it gives you 6 muffins. I might add a touch less nutmeg next time. They seem to be the best when you let them get a little bit crispy in the oven and then dip them in the margarine/cinnamon sugar. Very good and very quick and easy!

Creamy Chipotle Chicken

Reviewed: Oct. 19, 2010
I made this as written, but I heated and blended all of the cream ingredients ahead of time to minimize cream cheese chunks. It was a little too spicy, for us, as written. The taste of the sauce is great, it's the aftertaste that really rocks your world. So, with rice it's a little bit too spicy and I think that the next time that I make it that I will go a little lighter on the peppers and adobo sauce. I also discovered that it’s a good idea to go lighter on the pepper at the beginning, it seems that simmering in the crock pot 'wakes up' the spiciness of the peppers, so even though it was just right before putting it in the crockpot, afterwards, it was a little bit too much. Also a fun little discovery: although it was too spicy for us with the rice, if you dip corn chips in it, it makes an amazing chip dip!! Perfect for a SuperBowl party or whatever!!!

Caramel Apple Pork Chops

Reviewed: Oct. 23, 2010
I did like someone suggested and let it marinate in a soy sauce/apple juice mix (2:1 apple juice to soy.) Sauteed some onions to go with the chops/apples. I also doubled the brown sugar sauce so there would be more to dip and mop. I think next time I make this, I will thicken the sauce. Spread the apple mixture over the chops, covered with foil, and let them bake @350 for 20-25 mins. About 15-20 minutes before we were ready to eat, I added some candied pecans. We ate it with steamed rice and peas, also amazing with mashed potatoes and it was heavenly.

Baked Potato Soup V

Reviewed: Oct. 25, 2010
For 2/3 of the milk, I used skim, and for the remaining 1/3, I used water (to make it less fatty). I think next time, I will do as other reviewers suggested and use chicken broth instead of the water. Other than that, I followed the recipe to a tee. Be careful to cook the potatoes enough, ours were a little bit harder than we would've liked. Overall, it was very good though. Didn't make the best leftovers in my opinion...
