Double Tomato Bruschetta

Reviewed: Dec. 31, 2013
Absolutely delicious! We followed the recipe exactly (except we did parmesan instead of mozzarella) and absolutely loved it.

Whole Wheat Ginger Snaps

Reviewed: Oct. 9, 2013
We made these exactly as written, except we chilled the dough for a couple hours (I didn't have time to cook them right then and this actually made it really easy to roll them into balls), and then rolled each individual ball entirely in sugar. I must admit, we were a little nervous after tasting the dough, it was pretty darn spicy. But we figured we might as well bake them anyway. They were perfect!

This is an excellent soup! So versatile, and you can add veggies (which we did) and other good things to your heart's content!

Chicken and Gnocchi Soup

Reviewed: Feb. 4, 2013
Very good starting point. I think in the future, I will chop up the spinach so it's not in such large chunks... Also, this didn't turn out as thick as I would've liked. I think next time I'll do a roux. Maybe add some rosemary. Thanks!

Best Ever Banana Bread

Reviewed: May 1, 2012
I've made this twice now. The first time was a bit of a disaster. I doubled it (lot's of old bananas) and put the batter in two 9x5 pans and it boiled all over the place in the oven. THe second time I made it, I did a single batch in two 9x5 pans. And it was delightful. 5 stars because this is one of the best banana bread ever! 2 stars for me and my stupidity...

Buttermilk Oatmeal Muffins

Reviewed: Jan. 13, 2012
These were delightful. I doubled the recipe because I wanted more than 8 muffins, and then I ended up with 24 muffins. So you really get about 12 muffins per batch. But, I was so stinkin' glad that I doubled the recipe because they were delicious. Per other reviewers comments, I added a tsp of vanilla (1/2 tsp per batch). These were delightful!

Slow Cooker Chicken Cordon Bleu

Reviewed: Oct. 20, 2011
Ok, we really loved this. It was delightful with mashed potatoes. So I set out two pieces of ham, overlapping them slightly, and then put a strip of string cheese down the middle. I laid the tenderloin in the middle of this, wrapped it up, and secured with a toothpick. Placed the 'wraps' in the crockpot and poured the gravy stuff on top. I also added about a teaspoon of garlic salt to the soup/milk for flavor. Then let her rip. About an hour before we ate, I sprinkled more swiss cheese on top of everything, layered that with the stove top, and then topped that with more cheese (what can I say, we really like cheese). (For the stuffing: i only have the herb kind, which I don't like as well, so I put in about a teaspoon of boiullon granules, and some more garlic salt, then added the butter) Like I said, we really loved this. Definitely a keeper.

Chicken Enchiladas V

Reviewed: Oct. 10, 2011
Very tasty. I also added some salsa to the sauce, and added black beans to the individual enchiladas cause I didn't make enough chicken... But all was well. Will definitely make again!

How can you not love BLT's? I am not a big mayo person, so I used a little ranch dressing. Delicious.

Quick Sausage and Bell Pepper Calzones

Reviewed: Oct. 3, 2011
These were pretty good. We used refrigerated thin crust pizza dough. I took a little longer than I was supposed to with other stuff, so I did this strombolli style which was a time saver. I think next time I would use normal or thick crust refrigerated dough.

Zucchini Parmesan

Reviewed: Oct. 3, 2011
This was good, but I wasn't madly in love with it. Followed the instructions consistently except that I also breaded some chicken to go with it to make it a little more filling.

Chicken and Apple Curry

Reviewed: Oct. 2, 2011
This was pretty good, per other reviewers, I added more curry powder than was originally called for. Which was a good move. I also put in some carrots and potatoes (What is curry without carrots and potatoes) The apples were pretty good, but think I put too many in...

Very Tasty! We put potatoes and carrots in with the chicken at the beginning, then stirred in the soup. The dumplings took a little longer in the crock pot than the recipe called for. It was delicious!
