Homemade Mint Chocolate Chip Ice Cream

When you don't have enough time to do an egg custard ice cream, then this is a really decent recipe that whips up in seconds and has the consistency and flavor of an ice cream that tastes labored over! I have used this recipe several times. Once exactly as written, another time with broken Oreo cookies instead of chocolate chips and most recently I used the ice cream base and instead of mint, I added lavender extract and sprinkled lavender flowers over scoops of ice cream just before serving to make a lovely lavender ice cream. All versions were formidable and enjoyed by all!

Lime Cilantro Cauliflower "Rice"

We loved this recipe! Even though we are a family of 3, I could have and perhaps, should have doubled the recipe; it warms up wonderfully the next day. I second the recommendation of using two limes - we love citrus in our household! Also, instead of butter, I used coconut oil and added just a bit of unsweetened shredded coconut. I can't say that we thought it was really white rice, as some reviewers mentioned, but it was so darn good nonetheless accompanying my husband's tasty Asian stir-fry. Already picked up two more cauliflower heads to make it again this week-end! Thank you for sharing this recipe, Abussone!

Braided Easter Egg Bread

My family loves this traditional Italian Easter bread. I couldn't find my grandmother's recipe and therefore I was delighted when I discovered this recipe on AllRecipes. Just like grandma's! I added a bit more lemon zest! DELIGHTFUL! AN ITALIAN MUST-HAVE AT EASTER!

Fresh Tomato Basil Sauce

Great recipe! Very much worth the effort! Homemade pasta sauce can never compare to what you can find in the store! We find that this recipe is perfect to store for later and enjoy on a cold winter's night with spaghetti and grated parmesan. Make it when the tomatoes are at their pick at the very end of summer. Delicious!

Coconut Pie

We love anything with coconut so it comes as no surprise that my husband and I really enjoyed this coconut pie! We really loved the egg-y texture as opposed to other coconut pies which tend to be too creamy for our taste. I added a little coconut extract before pouring the mixture into the crust and springled a little more of the shredded coconut on top before putting the pie in the oven. We are clearly coconut-holics, but I agree with the other reviews that suggest a 1/2 cup more of flaked coconut in the mixture is necessary. I already promised my husband that I would make it again this year, perhaps at Christmas. So easy to make, so yummy to eat!!!

Featherlight Scones

My husband and I love this recipe for scones! Every so often, I will jump out of bed on Saturday or Sunday morning and say, ''let's have scones for breakfast'' . . .30 minutes later delicious homemade scones are being served! On those occasions when we have company staying over, I have pre-made the dough for the scones, put it the freezer and then defrosted it in the refrigerator overnight, and lastly put the scones in the oven just after everyone is awake. Delicious, effortless and very popular with our guests!

Lemon Zucchini Bread

Lemon and zucchini, now you are talking! This bread is INCREDIBLE!!! I have added 2x as much zest but kept all other ingredients the same. I also use a cheese cloth to squeeze the extra moisture from the zucchini just after grading it. EVERYONE who has it wants the recipe! I make this bread when zucchinis are flooding the farmer's market in the summer. Also, it freezes wonderfully so you can have it later! YUMMY!

Aunt T's D.W.I. Rum Cake

I have very fond memories of my mother's bookkeeper making a traditional rum cake every Christmas for my family when I was growing up. Inspired by the childhood memory I wanted to make one myself for our New Year's party this year. This recipe was a wild success! My only suggestion, make extra glaze! I served the cake with whipped cream and the extra glaze and very shortly after I received a standing ovation from my guests. I plan to continue the Christmas rum cake tradition with my family and this recipe! Thank you, Aunt T.!!!

Cranberry Orange Bread

This bread is INCREDIBLE!!! What a crowd pleaser! I have added 2x as much zest and a handful of dried cranberries but kept all other ingredients the same. EVERYONE who has it wants the recipe! And now that cranberries are in season, I can't imagine a better time of year to make it! I am making it right now to give as a host-gift when I go to stay over-night with friends this week-end. YUMMY!
