Angie's Perfect Dinner Rolls

Reviewed: Oct. 11, 2011
Wow, these are good rolls with just a hint of sweetness. First of all I halved the recipe since I planned on using the breadmachine and felt it couldn't handle the 7 cups of flour. Plus increased the yeast to 2 1/2 teaspoons after reading reviews which stated the rolls did not rise properly. The dough was way too sticky so additional flour was needed to form a proper ball. Once the dough cycle was completed I formed into rolls, let rise till doubled and baked at 350* for approx. 22 mintues. Yield was 9 large rolls in a 9 x 9 pan. Thanks for sharing your aunt's recipe, Cristy!!

Breaded Chicken Fingers

Reviewed: Sep. 26, 2011
Love this recipe and wouldn't change a thing. A beautiful, light breading, packed with a delicious garlicky flavor. No need to bump up the seasonings especially if you plan on serving a dipping sauce. Honey dill or ranch are our favs. The only change I made was to put the breading mixture in a shallow baking dish rather than a plastic bag - far less messy in my opinion. Also I let the breaded strips "dry" on a wire rack for about 15 minutes before frying. The coating seems to stay on better. Thanks for the fantastic recipe!!

Lemon Pepper Zucchini

Reviewed: Sep. 2, 2011
Just okay. First of all I sliced my zucchini lengthwise, rather than in slices. Brushed them with a little bit of melted butter and seasoned lightly with the lemon pepper. The baking temperature was lowered to 350 degrees, since I was also doing chicken, and the veggies took about 20 minutes. Topped the slices with grated parm till slightly melted. In my opinion the amount of butter/lemon pepper stated in the recipe is way too much.

Easy Morning Glory Muffins

Reviewed: Aug. 29, 2011
Definitely another keeper. Made as written, expect I used half brown sugar and half white. Also rather than shredding the apple I diced it finely. Cook time was off for my oven ... they needed an additional 10 minutes. But none the less delicious!! Thanks for the recipe, Debbie Clarke.

Glazed Ham

Reviewed: Aug. 29, 2011
Love this sauce! My only recommendation would be to cook your ham according to the type and weight. I usually buy a picnic shoulder which needs to be cooked on the stove top and for 2 to 2 1/2 hours. Other than that the sauce is perfect just the way it is. Thanks for sharing this delicious recipe, Connie.

Man-Lovin' Potatoes

Reviewed: Aug. 29, 2011
I'm not a fan of potatoes, but my husband definitely is. So I gave this recipe a whirl and loved it. First of all the recipe was scaled down to 3 servings, which was just right for the 2 of us, plus a serving of leftovers. I used Russets rather than red potatoes and cooked them until they were barely tender. I doubled the sauce and it was just right for the amount of potatoes and eye balled the amount of bacon, red onion, cheddar cheese, and parm. After 40 minutes in the oven, these potatoes were cooked to perfection, bubbly and a beautiful golden brown, not to mention down right tasty. This one's a keeper! Thanks for sharing your recipe Old Crow.

Oven-Crisped Potatoes

Reviewed: Aug. 15, 2011
A tad disappointed in this recipe, considering how highly it has been rated. First of all my potatoes stuck to the baking dish and I now question if the dish should have been greased. We also found them bland and on the dry side. Won't be making this one again.

Spicy Baked Sweet Potato Fries

Reviewed: Jul. 31, 2011
Still searching for a sweet potato fry recipe that is crispy on the outside. Not sure if this is possible, but this isn't the recipe. Since I was just making this for the two of us, I eyeballed the seasonings according to the amount of fries I was making. Tasty, tender on the inside, but definitely not crispy.

Potato Salmon Patties

Reviewed: Jul. 30, 2011
Not a fan ... was hoping for so much more, but nothing to write home about as far as I'm concerned. Followed the recipe to a tee with the exception of using real mashed potatoes rather than the flakes. Yes, they did fry up nicely, however something is missing ... flavor. Sorry JoyLee, won't be making these patties again.

California-Style Barbecue Chicken Pizza

Reviewed: Jul. 27, 2011
Made this pizza tonight using Jay's Signature Pizza Crust recipe from AR and was it delicious. A little extra work, but so much better the ready to use crusts. Never bothered to measure anything and kept the ingredients the same. I cooked the chicken breasts first in a little olive oil and seasoned them with roasted garlic sea salt. Once the chicken was done, I then cooked the sliced green pepper and a very liberal amount of diced red onion. Will definitely be making this pizza again. Thanks Kraft, this is a keeper.

Ty's Barbequed Chicken

Reviewed: Jul. 10, 2011
Nice marinade, quick and simple to mix up, plus I usually have all these ingredients on hand. I used skin on chicken leg/thighs, marinated all day in a sealable food storage bag, turning frequently before grilling. Only a couple of small changes - doubled the sauce for 5 pieces of chicken, added a liberal amount of minced garlic, and reserved some of the marinade for basting during the last 15 minutes or so of cooking. Red pepper flakes might be nice if you like a bit of zing. Will be making this again. Thanks for sharing your recipe, Tammy!!

Oatmeal Bread II

Reviewed: Jul. 7, 2011
Yes, this bread is outrageously delicious! Just one small adjustment use 2 1/4 teaspoons of yeast rather than the 1 tablespoon called for in the recipe. The dough still rose beautifully and no overly yeasty taste. Thanks, Liz. Fantastic recipe!!

Jay's Signature Pizza Crust

Reviewed: Jul. 5, 2011
Thanks for sharing this recipe Jason! I finally broke down and decided to make homemade pizza using my bread machine. Ingredients were added according to the manufacturer's directions, but I did find a lot more flour was needed. None the less, this dough was very easy to work with and made two 12 inch pizzas. Also I did not let the dough rise for the 15 or 20 minutes before adding the toppings. Second time around I replaced 1 1/3 cups of the flour with whole wheat. Delicious and yes it is soft and doughy on the inside and slightly crusty on the outside. Just be sure not to over cook.

Rhubarb Coffee Cake

Reviewed: Jul. 3, 2011
Having an abundance of rhubarb in the garden, I was on the search for some terrific recipes and this one did not disappoint. After reading many of the reviews, I decided to increase the amount of rhubarb and added only an additional 1/2 cup. Also, added 1 teaspoon of vanilla and increased the topping to 1 1/2 times, which I'm glad I did. Baking time in my tube pan was approximately 1 hour. Thanks for the delicious recipe, Deb Quest!!

Rhubarb Muffins

Reviewed: Jun. 1, 2011
These muffins are drop dead delicious! Unfortunately, I did not have buttermilk on hand and had to use the vinegar/milk substitution (which I don't find as good as the real thing). Also added 1/4 teaspoon of cinnamon to the dry ingredients and the rhubarb (to avoid over mixing), plus a generous sprinkling of turbinado sugar on top of each muffin before baking. Can't wait to try other fruits such as peach, mango, etc. Thanks for sharing your recipe, Alma ... definitely a winner here.

Gramma Bertha's Banana Cake

Reviewed: May 27, 2011
It is hard to find a banana cake recipe that doesn't seem more like a bread, but this recipe certainly fits the bill. I added 1 teaspoon of vanilla and 1/2 teaspoon of salt to boost the flavor. The cooking time seemed to be bang on and the toothpick clean when inserted into the middle. But, like other reviewers I was concerned when cutting into the cake that it was not cooked properly and maybe mashing the bananas would alleviate this problem next time. I drizzled a caramel glaze over the turned out cake and it was delicious. Thanks for sharing your recipe, LISAPAV!!

Home-Style Yeast Bread

Reviewed: May 14, 2011
First of all I just wanted to make one loaf to try out first so I scaled the recipe down to half. Also used the bread machine on the dough cycle, but 7 cups of flour was going to be way too much for my machine. The only change was using all purpose instead of bread flour, plus additional flour was needed to get the dough just right. This bread is tasty. We found it light and fluffy with a lovely crisp crust and not overly sweet. Just one tip ... make sure you have a large bread pan. Thanks for the recipe, Launa. We loved it!!

Kalacs (Hungarian Cinnamon Swirl Bread)

Reviewed: May 4, 2011
Now this is good ... really, really good. I used my bread machine to make the dough and the measurements were bang on. No need for addtional flour or liquid, the only small change was subbing oil for the melted butter. I did however double the cinnamon/brown sugar mixture based on other reviews. No need to skimp on all that sugary goodness. The other half of the dough was made into cinnamon twists, which were delicious. Can't wait to try different variations on this perfect recipe. Thanks for sharing wisweetp!!
