Curried Chicken Salad

I loved the way this recipe came out, but had to modify to get the curry flavor that I wanted. Even after the flavors settled for a night, the original recipe tasted too much like mayo, so I doubled the amount of curry powder and lemon juice. It came out great after that!

Curry Coleslaw

If you like curry flavor you will really like this recipe. I used yogurt instead of sour cream to lessen the calories a bit, and used a mix of both dry and honey roasted peanuts for a little spicy/sweet combination. I also recommend drastically reducing the amount of cayenne unless you like things REALLY spicy. I highly recommend this as a side dish to jerk chicken.

Chicken Pot Pie II

Best pot pie ever! My friend sent me this recipe and we are both hooked. I like to use a turnip for a little extra spice with the starch, and add plenty of Italian Seasoning and cream with mine. I also made it with the leftovers from a roasted chicken that I had cooked the night before and liked the addition of some dark meat. I absolutely cannot wait to make this again!

Cool Cucumber Salsa

I love this recipe. The cucumber and sweet peppers give such a nice crunch and all the flavors are so fresh. It was a bit too spicy for some, so I might use less heat next time.

Mom's Zucchini Bread

So moist and delicious! I made this once with half veg oil and half apple sauce (in muffin form) and it didn't come out as moist. The second time I made it with all veg oil and in a bread pan, and it was perfect. I think I'll experiment some more with the ratios as I would really like to cut down on the calories wherever possible, but if you want full moistness definitely go for the oil.

Roasted Cauliflower Soup

I ended up making this with romanesco, just because that's what I had on hand. So delicious! Even our friend who "doesn't like vegetables" went back for seconds. The only other thing I added was 1/4 tsp of cayenne pepper for a little kick. Will definitely be making this one again. Thanks for the great recipe!

Potato Leek Soup III

Spinach Frittata

This frittata came out great! I ended up sprinkling the top with feta cheese, then baking for about 10 mins at 300 degrees. The only thing I would caution is that my cast iron skillet has not been the same since - if you use one be sure to use some non-stick spray before you cook!

Radish Dip

This was okay, but came out tasting mostly like garlic. I too halved the cream cheese like other reviewers, but still didn't get the radish flavor I was looking for. It also got a little runny the next day.

Hearty Split Pea Soup

This soup has an incredible taste to it. For some reason I always think I'm going to dislike split pea soup and then I fall in love with it. I used chicken stock instead of water, and spicy Louisiana Sausage instead of ham (I really liked the kick it gave the soup). Just bought another couple pounds of split peas - will definitely be making this one again!
