Bacon and Caramelized Onion Rolls

These rolls are a huge hit with my family. I make the dough in my bread machine as a time saver and for dough consistancy. The first time I tried the recipe, I used all purpose flour per the directions. I don't recommend using all purpose flour if you are going to use a bread machine. :) I now use 2 1/2 cups of bread flour when making the dough. Works great. I use rice wine vinegar and 1 TBS sugar instead of port when carmelizing the onions per another reviewer's suggestion. I end up with 15 nice sized rolls that are baked like cinnamon rolls on a cookie sheet.

Sauteed Apples

My daughter had tried sauteed apples at a relatives and didn't like them. She loved this recipe. I used translucent apples that we had picked from a next door neighbor. Sweet with a little bit of tang. We really enjoyed this recipe.

Gnocchi I

I boiled 2 potatoes whole, skin and all and peeled after cooking. I didn't need both potatoes. I used 1 cup of mashed potatoes, 1 cup flour and 1 egg. I didn't have any problems with the gnocchi falling apart or not rising. Tastes like a pasta.

Bread Pudding II

Great recipe. I used leftover hot dog buns, brown sugar and dried cherries instead of raisins. My husband loved this. Next time I will probably use less sugar and maybe try apple pieces and chopped walnuts. Very easy and inexpensive dessert to make.

Pumpkin Zucchini Bread

This is a wonderful recipe as is. It has a delicate flavor that doesn't overwhelm with any of the spices. The only changes I made were no nuts and instead of bread, I made muffins. Thanks for sharing this recipe.

Lemony Turkey Rice Soup

Yummy. I love the flavor of this soup. It reminds me of hot and sour soup in my favorite Chinese restaurant without the spice. The only change I made was to use cumin and coriander as I was out of fresh cilantro. I may add onions next time for additional flavor, but this recipe is fine without changes.

Asian Orange Chicken

The Old Boy's Strawberry Pie

I love the flavor of this pie, but it needs some changes to work. I needed to use between 6-7 cups of berries fresh from the garden to fill the crust and I didn't have an issue with sinking berries. I used an oatmeal crumb topping as suggested by another reviewer. I didn't have a "flour" flavor in the filling as I made sure to mix the berries evenly in the flour mixture. Next time I will use additional corn starch and less flour to help the pie set up better. I would have rated this a 4 1/2 if I could.

Broccoli Pie

This recipe was okay. Next time I will add more seasonings, more baking mix and per my husband bacon. I would also add more broccoli since I made this recipe to use up some broccoli from the garden.

Light and Fluffy Spinach Quiche

Yummy. I sauted the onion and fresh spinach (it was what I had on hand). I reduced the mayo to 1/3 of a cup. I also added ham as it was for dinner and my husband likes meat. Four eggs worked great in a regular pie crust. Wonderful flavor for such an easy recipe. Next time I might add some sliced mushrooms to the mix.

Tomato Cakes

Easy recipe to follow. I used fresh tomatoes from the garden, finely diced onion, garlic, oregano, basil and a little parmesan cheese. If you keep the batter cold, the patties will keep their shape better. They do burn easily if you don't watch them. I will make this again, maybe adding some jalapenos for a little heat for my husband.

Chocolate Zucchini Bread II

Best Carrot Cake Ever

Yummy. I used carrots out of our garden and made sure to drain them after shredding per other reviews. We tried the cake without frosting and loved it. Maybe next time I'll frost it. :)

Zucchini Cream Pie

Yummy way to use up zucchini. I did reduce the sugar to one cup per other reviews. I added the cinnamon and nutmeg with the other ingredients in the blender. I sprinkled additional cinnamon and nutmeg on top of the pie before baking. My husband and daughters thought this pie tasted like a pumpkin pie.

Seafood Stuffed Zucchini

I followed the recipe but I did add a little water to the baking sheet as other reviewers suggested. I also used one large zucchini instead of four smaller ones and added diced mushrooms. I did wonder about the lack of salt, but it was great without it. My husband loved this recipe and we will have it again.
