Chorizo and Lentil Stew

Reviewed: Mar. 20, 2009
A solid four star recipe. It doesn't look appetizing, but tastes pretty good. Husband actually gave it two thumbs up. oh yeah! I made this exactly as stated, just sprinkled some cheese on top at the end.

Slow Cooker Beef Stew I

Reviewed: Mar. 15, 2009
I followed this recipe almost exactly as written. The one change I made was to use water instead of beef broth in order to control the sodium content. For this reason, it needed a little extra salt at the end, but was otherwise quite toothsome. My husband was very pleased.

Barley and Mushrooms with Beans

Reviewed: Mar. 1, 2009
I had really high hopes for this recipe, but was quite let down by the result. I followed it pretty much spot on, but added an extra cup of mushrooms. When it finished cooking, I thought it was very bland. To make it edible, at the last minute I added about 5 ounces of feta crumble, some fresh parsley and about a tablespoon of cracked red pepper. If I make this again, I think I'll add some goat cheese crumble and maybe some other fresh herbs.

Ground Turkey Casserole

Reviewed: Feb. 22, 2009
This was pretty good. I took the advice of other reviewers and added some sauteed some garlic, green peppers, and onions into the turkey. I also added about a tablespoon of dried oregano and some kidney beans to up the fiber. I used reduced fat sour cream and cream cheese also. Delicious and looking forward to eating the leftovers.

Artichoke Spinach Lasagna

Reviewed: Feb. 22, 2009
This recipe was surprisingly good. I didn't think all the flavors would come together so well, but they did. Also, it had a nice consistency and was not too soupy. I used no-bake lasagna noodles and a little less (about 10 oz. instead of 14 oz.) broth. I also used alfredo sauce at the advice of other reviewers. I added some mashed up cannellini beans to give it some fiber. Turned out surprisingly good.

Butternut Squash and Turkey Chili

Reviewed: Feb. 16, 2009
I made this once and followed the recipe almost exactly. The only annoying part was peeling the butternut squash. I was pretty slow at it. The chili turned out fantastic, though.
