Shrimp and Corn Chowder with Sun-Dried Tomatoes

We love this. I took it to a potluck 2 years ago and people still talk about it! I use fat-free half-and-half and it was just as good. Perfect just as written, but it does not make a lot so you might want to consider doubling the recipe if you have several hungry people!

Hearty Stir-Fry Salad

This salad was excellent! It does take a lot of prep, so for us it is more of a weekend dinner rather than a weeknight. I used a can of mandarin oranges to make it easier. I used the chicken broth rather than the sherry, and it was really good. Definitely use the cilantro, it adds so much flavor! In order to allow premium leftovers, we left the meat, veggies, and salad separate and then stored each in separate containers. Thank you so much for a delicious, healthy dinner!

Brunch Egg Bake

This was very good. I left out the ham because I was bringing this to a large group with dietary restrictions. To compensate, I doubled the mushrooms and added a green pepper. It got rave reviews. I did have to bake this much longer than as directed, but that could have been my fault because I covered the dish during baking. In the future I will try it uncovered and hopefully that will cut back on the cooking time. Thanks!

Bourbon Pecan Chicken

I made this for Valentine's Day dinner, and it was fabulous! I tried to make the clarified butter, but just couldn't get it to work (most likely my fault). I ended up doing 1 tbsp olive oil and 1 tbsp butter and it was fine. I dipped the chicken in soy milk before coating with the breadcrumbs mixture and it worked very well!

Sage Pork Chops

I made these as written, and they were very good. I'll probably decrease the amount of salt and pepper next time. I followed the suggestions of others and made a gravy out of the sauce after removing the chops from the pan by adding 2 tbsp of flour and adding cold water until it looked right. Served with broccoli and roasted red potatoes.

Potato Minestrone

The first time I made it, I wasn't wild about it. Too much spinach. The second time I made it, I used fresh baby spinach at the end, and wow, so much better! Plus no draining!

California Grilled Veggie Sandwich

Very good. I will probably do a bit less feta next time. Since it is such a strong flavor, it was a bit much for me. Other than that, simply fantastic. Assemble any leftover sandwiches, wrap with foil, and re-grill the next day!

Easy Fruit Cobbler

Very easy and good. It wasn't what I was expecting, but still delicious. Mine turned out more like a "bread pudding" rather than a cobbler. I used white peaches and served with ice cream. Will make again for sure!

Chicken Fried Chicken

Awesome. I did not have seasoned salt, so I just used regular salt. Also added some garlic powder and onion powder to the mixture for seasoning. I followed other user's advice and first dredged chicken in flour, then egg, then the mixture. I made a gravy using another recipe from this site and it was fantastic. Thanks!

Jamie's Cranberry Spinach Salad

This salad was excellent! The first time, I made it exactly as written. Then, for my second helping, I added a chopped Granny Smith apple; this addition made it even better. My husband added feta and he said that was great as well. Highly recommended.

Campbell's Kitchen Creamy Chicken Enchiladas

I have made this recipe a lot and have received so many compliments! My husband prefers the chicken, but I love just using fat-free refried beans in mine. I think the texture is better. We don't stir the chicken in with the sauce so that way we can make half with chicken and half with bean. If you like tomatoes, I would suggest adding more. Fantastic!

Chicken Rotini Stovetop Casserole

I'm sorry, but this was not good. What a strange way to make a cream sauce. It was way too buttery (1/2 a cup of butter?!) and didn't mix well. I added some flour to help it thicken, but the flavor was just off. My husband ate it, but I couldn't. Sorry.

Creamy Chicken and Wild Rice Soup

I have made this soup many times, and I love it. I agree that adding carrots and celery makes it much better. One quick note: if you do use a rotisserie chicken, it will change the flavor of the entire soup dramatically. Not that it is necessarily a bad change, just different. I like the flavor of the soup so much, I probably will not use a rotisserie chicken again.

Spicy Pretzels

I am in love with these pretzels! I used garlic powder instead of salt just to cut down on the sodium a bit. I also baked them in the oven for a few minutes to get them dry. Absolutely addictive!

Lime Chicken Picante

This was awesome! I used picante sauce instead of salsa, as the name suggests and it was great. I read here that several reviewers thought that the dijon was overpowering, but I made it as written and we loved it. I am not even a big dijon fan. Thanks for the great, healthy recipe!

My husband and I love this and have made it many, many times. I am a big lover of tomatoes in general, so I personally find the sauce to be fantastic! I have subbed light soy in the past without a problem, and sometimes I cut down on it just to save on the sodium.
