Nutty Granola II

I just made this granola and it is delicious! I followed the proportions of the recipe, but used walnuts, almonds, coconut, and raisins. Also added some cinnamon. This was so easy! I'll be making this again and again. Thanks!

Baklava

AMAZING! I followed the directions as stated, except making sure to cut only 3/4 through the baklava before baking. I have made this using all walnuts and a mix of walnuts and pistachios. Although shelling the pistachios is a pain, they make the baklava taste much more authentic and delicious! For the butter, I melt it in a bowl and apply with a pastry brush. I usually make a half recipe in an 8X8 pan, baked for 40 minutes. This is one of my very favorite dessert recipes! Thank you!

These taste really great! I will definitely make them again. I made small patties and pan fried them. They do have some trouble sticking together. I added a bit of oil to the mix to help.

Lentils And Spinach

This was good and hearty. I used vegetable broth in place of the water, maybe 1.5 onions, more cumin, and fresh spinach. My boyfriend and I both really enjoyed this served over a baked potato.

Apple Bread

I love this bread! It just came out of the oven and it is so delicious! I made a half batch because I only have one loaf pan. The only small change I made was to use half white and half brown sugar. The batter is very thick, but it does all come together just fine. UPDATE: I made the full recipe today, but made muffins instead. I got 15 and baked for 28 min. I brought them to class and everyone loved them. I love this recipe!

Carrot Burgers

Sorry, these are much too sweet for a veggie burger, and I didn't even add the sugar. I also don't like that the patties are mostly cornflakes. They are more like cornflake burgers, not carrot burgers, and they taste like it. I won't be making these again. In order to get the patties to stick together, I slightly mashed the carrots after boiling and added a splash of oil to the mix.

Oatmeal Chip Cookies

These tasted great! I like trying different add-ins, my favorite combo so far is chocolate chips, coconut, and walnuts. The cooking time was too long for me. My cookies were overdone at 10 minutes, but I'll blame my oven.

Best Chicken Ever

This was pretty good. I'd make it again. I marinated the chicken in the sour cream for about an hour before adding the coating. I used a cereal similar to bran flakes, because that's what I had.

Grandma's Hash Browns

This makes the best hash browns ever, rivaling restaurant quality. But it's very important not to overcook the potatoes. I make a huge batch and keep leftover shredded potatoes in the freezer, so they're ready whenever we want them. I like to leave the skins on. It is dangerous for me to have this recipe, because now I want to make them all the time!

Lentils with Tomatoes

This was simple, hearty, and delicious. A great base recipe to change to your tastes. I used spinach instead of green pepper, 1 can of diced tomatoes, added some garlic, and cooked the lentils in vegetable broth. I served it over couscous. I loved it as is, but my boyfriend thought it could use some more seasoning.

Asparagus Cashew Rice Pilaf

Refried Beans Without the Refry

These are great vegan beans! I did add more spices than listed: 3-4 tsp cumin, 1 jalapeno, 4-5 cloves garlic, cayenne to taste. Since many reviewers said it was too salty, I only used half the salt in the beginning, but it ended up being bland. In the end, I added the 5 tsp salt listed.

Best Brownies

These are delicious, some of the best brownies I've ever made! And I didn't even include the frosting. One reviewer suggested adding peanut butter, so I put in about 2/3 cup. Yum! Fresh out of the oven, I did think they were slightly cakey, but very moist. The next day, they were perfect - chewy, dense, and fudge-like.

Spicy Black Bean Cakes

Wow. These are really good! The sour cream is great. Since I usually make a half batch, I just use a whole egg, and the patties stay together just fine. I also broiled them a little longer, as I wanted them very crispy.

Brown Rice, Broccoli, Cheese and Walnut Surprise

I really like this combination of ingredients! I would never thought of it myself. This is in my regular dinner rotation. I steam the broccoli on the stove top, I like it much better than the microwave method. I also use regular brown rice, not instant.
