Applesauce Cake VI

I used whole wheat flour and I cup of oil with an extra 1/2 cup of applesauce. I think I could reduce the oil by another 1/2 cup and increase the applesauce. Made them into muffins, cooked about 25 minutes and it was a bit too long. Made lots (three muffin tins, don't remember how many in each tin...)

Caribbean-Spiced Roast Chicken

Zucchini Bread III

I think the recipe is decent. I subbed applesauce for the oil, all whole wheat and only used 1/2 cup of brown sugar. I think it could have used more sugar, it wasn't sweet enough. Ah well, I'll know for next time!

Our go to recipe for biscuits. We substitute the butter for whatever fat we have on hand (lard/tallow/bacon fat/butter) - yum!

Pork Fried Rice for Two

I found it to be a very subtle flavour so can see how others would call it bland. My husband and two kids though all went for second helpings which is rare so I can't complain! I left out the onions and broccoli and added in peas and doubled the chinese five spice but didn't marinate.

My husband and kids liked them but I didn't very much. I didn't cook them as long as was stated though after the sauce was on so perhaps it would have deepened into a richer flavour then.

Very nice muffin. Not amazing but nice. Used 1 tsp. cinnamon, 1/2 tsp. ginger and 1/4 tsp nutmeg for spice and used a cup of pumpkin puree.

Pumpkin Oatmeal

Nice recipe. We left off the honey (reducing sugar early in the morning) and the walnuts (I'm allergic to them raw and was too lazy to toast them). It was still a good recipe but I could see the honey and walnuts taking it right over the top. I also used regular milk and banana squash puree.

I made this with 2 cups of whole wheat and 1 cup of all purpose and it turned out great (except for the burnt bottom - I was trying to bake too many things at once and it was down too close to the oven element). I'll definitely be making it again and will try with 3 cups of whole wheat next time.

Mom's Zucchini Bread

Great! I substituted apple sauce for most of the oil (then topped up the cup with oil), used whole wheat flour, 1 cup white, 1 cup brown sugar and forgot the vanilla extract. It was very nice, even a bit too sweet still.

Banana Bran Zucchini Bread

Very nice recipe. Made some substitutions just based on what I had on hand - squash instead of pumpkin, 2 whole eggs instead of 1 whole and 2 whites, 1/4 cup maple sugar (ran out) and 1/4 cup honey instead of 1 cup maple syrup, 1/3 brown sugar instead of raw, didn't measure the zucchini - just used two I had on hand, regular whole wheat flour. Could be slightly sweeter than I made it but was still nice.

It was a nice basic bean salad. I didn't add the onion and had to guesstimate the bean amounts a bit (used dried beans instead of canned) and didn't have fresh basil so used dried. So take the rating with a grain of salt!

Really nice. Did one set without the rub since my sister hates spice. They still tasted good but not amazing like the ones with both rub and sauce. I used the Jamaican Barbecue sauce from this site.
